Meatloaf
1-1/2 pounds ground beef
1 cup shredded Swiss cheese
24 Ritz crackers (crumbs)
1 egg
1/4 cup minced onion
1 Tbs. parsley
1/4 tsp. black pepper
1/2 tsp. salt
1/3 cup ketsup
Mix all ingredients. Form into loaf. Bake on a rack with water in bottom of pan for
about 1-1/2 hrs. at 350 degrees. Remove from oven and let stand 5-10 minutes
before cutting.
If desired you can pour a mixture of brown sugar and ketsup over the top of loaf 5
minutes before removing from oven.
Maconmama tried this with mozzarella cheese instead of swiss, and she liked the way it turned out.
StillJulie made it with a mixture of cheddar & mozzarella and was pleased with the results.
Ohiomom thought she would try adding a package of spinach.

I like to make a huge batch of Nell's meatloaf recipe and form them into little balls which I bake. After they're baked I freeze 'em on a cookie sheet. When they're frozen I dump 'em in a big freezer Ziploc and they're really easy to grab as many as you want or need at a time.
I also did these as an appetizer to take to a Christmas party last year and everyone loved' em--I just took a whole bunch of the baked meatballs and threw 'em in the crock pot with a couple cans of cream of mushroom soup and let 'em simmer. They were really tasty--also were great this way as a topper for baked or mashed potatos

Oven Beef Stew
2 lbs. cubed stew meat
2 tsp salt
2 cans (14 oz) chopped tomatoes
6 carrots, chunked
1 medium onion, chopped
2 stalks celery, chopped
4-6 med potatoes, chunked
1 can whole kernal corn, drained
1 can cut green beans, drained
1 handful frozen peas
1 pkg onion soup mix
1 1/2 cups water
2 Tbls minute tapioca
Mix all ingredients together. Put in a roaster or large casserole dish with lid that
covers tightly. Bake at 250 for 4 1/2 hours.
(This is a great recipe b/c you can adjust it for your family.)
The bread bowls: I bake them. I just use my bread machine to mix
up a batch of bread dough, then shape it into little round loaves. (3 or 4 out of a
batch) Then I cut the top off and hollow them out. I like to butter and brown the
tops. They're yummy along with the soup.
I used a French bread recipe today, but you can do them out of just about any kind
of dough that isn't really sticky and/or thin. If you need a recipe, let me know. I can
post it too.

Italian Bow Tie Supper
------------------------------------------------------------------------
1.5# ground beef
1 medium onion, chopped
1 garlic clove, minced
2 cans (8 ounces each) tomato sauce
1 can (14.5 oz) stewed tomatoes, cut up
1 tsp dried oregano
1 tsp Italian seasoning
Salt & pepper to taste
1 package (16 oz) bow tie pasta, cooked & drained
1 package (10 oz) frozen chopped spinach, thawed & well drained
1.5 c (6 oz) shredded mozzarella cheese
0.5 c grated Parmesan cheese
In a skillet, cook the beef, onion, and garlic over medium heat until meat is no longer pink; drain. Transfer to a slow cooker. Stir in the tomato sauce, tomatoes, and seasonings. Cover and cook on low for 7-8 hours or until bubbly.
Increase heat to high; stir in the pasta, spinach, mozzarella and Parmesan cheese. Cover and cook for 10 minutes or until heated through and cheese is melted.
6 servings
Leftovers freeze/thaw well.

cheeseburger pie
1lb ground beef
med. chopped onion
can cheddar cheese soup
2 containers cresent rolls
brown beef and onion, add seasoning (salt, pepper), soup
in a 9X13 pan roll out cresents pinch together a bit so they don't seperate, put beef mix then the other cresent rolls
bake at 350 for 15-20 minutes

Mix the following and form into patties. I make six.
1 pound hamburger
1 c bread crumbs or dry stuffing
2 eggs
3 Tbsp total (choose from steak sauce, worcestershire sauce, and bbq sauce)
Chopped onion (optional)
These stay together so much better than just plain hamburger (at least for me). Also they're super moist and just plain old yummy.
I also put cheese on them the last minute or so of grilling.

Ok.. breadcrumbs... do you just break up bread, or do you toast it then break it up?
Answer:
I've done a variety of things. Sometimes I buy a cannister of breadcrumbs. Sometimes I break up pieces of bread. I've heard of people toasting it first (that's probably what you're supposed to do, but I'm too lazy). You could also use croutons.

You can also omit the bread crumbs and add a package of Lipton Onion Soup mix.

I just lay bread out on a cookie sheet and then stick it in the oven at a low temp for awhile to dry it out well--easier for me than toasting each piece. Then I smash it up and put it in a jar--sometimes in the freezer until I'm ready to use the crumbs.

I can't take credit for this recipe, but I'll post it here anyway.
Easy Sloppy Joes
1 pound beef
1 medium onion
1/4 c. chopped green bell pepper
2 c. jarred spaghetti sauce
2 T. sweet relish
1 T. chili powder
8 hamburger buns
In a large skillet, thoroughly brown beef. Drain fat. Add onion and bell pepper;
saute lightly. Add sauce, relish, and chili powder. Simmer 15 minutes. Serve on
hamburger buns.
My dh loves this, and so do my kids. I recommend the spaghetti sauces that are
meaty, not traditional. There is something about the flavor that is different. But, I
also use the cheapest spaghetti sauce since it isn't actually for spaghetti.

Beef and noodle casserole

Very easy, no real measurements, but you can't get it wrong~it's a consistency thing.
about 1 lb ground beef, browned with about 1/2 onion and drained
about 1/2 pkg egg noodles, cooked
1 can cream of mushroom soup
1 lg can Taste Toppers Frech Fried Onions
COmbine first 3 ingredients in 9X9 baking dish and season to taste with salt and pepper. Top with FF onions and bake at 350 until onions tan up a bit.
Tifferjo's tip: Add a little sour cream - very yummy!

Microwave Stuffed Peppers - Very Easy

I like this best in the summer when I don't want to heat up the house, and I have fresh peppers from the garden (and occasionally even homemade salsa).
1# ground beef
2 c salsa
1 c frozen corn
1/4 c water
3/4 tsp ground cumin
3/4 tsp dried oregano
1 tsp salt
1/2 tsp pepper
1/2 c uncooked instant rice
1 c shredded cheddar cheese, divided
4 medium green peppers, halved lengthwise
Sliced, canned jalapeno peppers, optional
Crumble beef into a microwave-safe dish. Cover and microwave on high for 2 minutes; stir. Cook on high 1-2 minutes longer or until the meat is no longer pink; drain. Stir in salsa, corn, water, cumin, oregano, salt and pepper. Cover and microwave on high for 3 minutes or until mixture bubbles around the edges. Stir in rice and 1/2 c cheese. Cover and let stand for 5 minutes; stir. Spoon 1/2 cupful into each pepper half. Place on a 12" round microwave-safe plate. Cover loosely and cook on high for 8-10 minutes or until peppers are tender, rotating a half turn once. Cover and let stand for 4 minutes. Sprinkle with remaining cheese; top with jalapenos if desired.

We love this lasagne
1 lb hamburger
1 clove garlic, minced
1 small onion, chopped
1 Tbsp basil
1 tsp oregano
1 tsp salt
1 (16 oz) can chopped tomatoes
1 (12 oz) can tomato paste
6-8 lasagne noodles-cooked
2 eggs
3 c. cottage or ricotta cheese (or a mixture of the two)
1/2 c. parmesan cheese
2 Tbsp parsley flakes
1/2 tsp pepper
1 lb. mozzarella cheese slices
Brown meat with garlic and onion. Drain. Stir in basil, oregano, salt, tomatoes, and
tomato paste. Simmer 30 minutes, stirring occassionally.
Beat eggs and add cottage/ricotta cheese, parmesan cheese, parsley, and pepper.
Mix.
In a 9"x13" pan, layer 1/2 of: noodles, cheese mixture, cheese slices, of meat.
Repeat layers.
Bake at 375º for 30-45 minutes (until bubbly). Let stand 10 minutes before cutting.

1 medium onion, finely chopped
1 tablespoon canola oil
2 eggs
1/2 cup 2% milk
2 teaspoons lemon juice
1 teaspoon salt
1 teaspoon basil
1/2 teaspoon dried oregano
1/2 teaspoon pepper
2 cups soft whole wheat bread crumbs (about 5 slices)
(I have used the canned bread crumbs, 2 cups)
1 package (10oz) frozen chopped spinach, thawed,
and squeezed dry
2-1/2 pounds lean ground turkey (or beef)
1/2 cup salsa
1 tablespoon butter or stick margarine, melted
In a skillet, saute onion in oil until tender; set aside. (I have just thrown the chopped onion in the meat too) In a bowl, mix eggs, milk, lemon juice, salt, basil, oregano, and pepper. Add the bread crumbs, spinach and reserved onion. Crumble turkey over mixture and mix. Shape into a 12 in. x 5 in. loaf and bake in a 13 x9 in. baking dish,sprayed with non-stick spray. Spoon salsa over top and bake uncovered at 350 degrees for 30 min. Drizzle with butter, and bake 30-35 min longer or until meat is 165 degrees. Makes about 10 slices

First one - Porcupine meatballs(and no, it's not porcupine meat - though I have made them from deer meat before and turkey too:-)
Ingredients: 1 lb ground meat, 1 cup instant brown rice(really any rice works), 1 egg, 1 Tbsp dried parsley, salt, pepper and other seasoning to taste(I love garlic powder in mine, yum!) 2 15 oz cans tomato sauce, 4 or 5 medium size potatoes, cut into chunks.
Directions: Mix meat, rice, egg, parsley, other seasoning and form meatballs(you'll want to make fairly large ones, a bit larger than a golf ball is my preferred size). Brown the meatballs in a large saucepan or skillet(dutch oven size if you have one). Once meatballs are brown, pour tomato sauce over meatballs and add cut up potatoes. Cook on medium for about an hour, until potatoes are done.
This makes a lot of food! This recipe can feed my family of four twice over. We usually have some green vege or salad with it, and occasionally rolls or biscuits. We don't usually eat dessert, except on very special occasions.

This is what I just finished making for a share-dish meal at church tomorrow. (I only made half of what the recipe calls for.) This comes from Quick Cooking 2000.
Pizza Pasta Casserole
2 lbs. ground beef
1 large onion, chopped
2 jars (28 oz each) spaghetti sauce
1 package (16 oz) spiral pasta, cooked and drained
4 cups (16 oz) shredded mozzarella cheese
8 oz sliced pepperoni
In a large skillet, cook beef and onion until meat is no longer pink; drain. Stir in spaghetti sauce and pasta. Transfer to two greased 9 x 13 baking dishes. Sprinkle with cheese. Arrange pepperoni over the top. Cover and freeze one casserole for up to 3 months. Bake the second casserole, uncovered, at 350° for 25-30 minutes or until heated through.
To use the frozen casserole: Thaw in the refrigerator overnight. Bake at 350° for 35-40 minutes or until heated through.
Yield: 2 casseroles ( 8-10 servings each)

This is a more expensive meal to make.
Mix together:
3/4 of a 2 lb bag of Southern style hashbrowns
1 can cream of chicken soup
1/2 of an 8 oz container of sour cream (optional)
Put in a 9x13 pan. Sprinkle with salt & pepper. Bake 15 min at 450°.
Add the following in layers:
1 lb shaved, diced corned beef
1/4 c Russian salad dressing
1 can drained sauerkraut
about 8 slices of Swiss cheese
Bake 20 min at 450°.
Julie's Notes: I've never made it in a 9x13 pan. I use an 8x8 for my family of four, and just cut back a little on the ingredients.
Also, I only make this when corned beef is on sale at the deli. Even then, I only buy half a pound of it.

This is my favorite marinade for steaks.
1/3 cup hot water
3 Tbsp finely chopped onion
2 Tbsp cider or red wine vinegar
2 Tbsp olive oil
2 Tbsp soy sauce
1 tsp beef bouillon
1 garlic clove, minced
1/2 tsp paprika
1/2 tsp coarsely ground pepper
Combine ingredients. Remove 1/2 cup marinade and refrigeratre. Pierce steaks several times on both sides with fork; place in container and cover with marinade. Turn to coat; cover and refrigerate for at least 3 hours. Remove the steaks. Discard the marinade. Grill or broil steaks. Warm the reserved marinade; serve with steaks.
This is for 2 12-oz ribeyes.
Note: I usually halve this recipe and do three ribeyes. I don't reserve any marinade to serve with the steaks. (I'm just too lazy, I guess. And DH prefers to use steak sauce when he eats it anyways.)

Better Than Pizza Casserole
1 lb. ground beef
½ c. green pepper, chopped
1 pkg. spaghetti sauce mix
1 (6 oz.) can tomatoe sauce
1 can biscuits
1/3 c. Parmesan cheese
1 pkg. Mozarella cheese
1 sm. onion, chopped
Line pan with biscuits. Brown ground beef, pepper and onion. Combine all ingredients and spoon over biscuits. Top with cheese. Bake at 350° for 20 to 25 minutes.

Layer these in a pan and heat until cheese is melted.
Tortilla chips. (1 lg bag)
Refried beans heated and thinned with water. (1 can)
Ground beef fried and then heated with salsa. (1-2 lb)
Extra sharp cheddar cheese. (1-2 c)
Serve with extra chips, salsa, guacamole, and sour cream.

(Quick Cooking Jan/Feb 2001)
This recipe is for a double batch, one to eat and one to freeze.
1 -1/2 pounds ground beef
1 large onion, chopped
1 cup water
2 to 3 tablespoons chili powder
1-1/2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
2 cups salsa, divided
10 flour tortillas (7 in.) cut into 3/4 in. strips, divided
1 cup (8 oz) sour cream
2 cans (15 1/4 oz. ea) whole kernel corn, drained
4 cup shredded mozzarella cheese
In a skillet,cook beef and onion over med. heat unti meat is no longer pink;drain. Stir in water, chili powder, salt, pepper, and garlic powder. Bring to a boil. Reduce heat; simmer uncovered for 10 min.
Place 1/4 cup salsa each in two greased 8 in. square baking dishes. Layer each dish with a fourth of the tortillas and 1/4 cup salsa. Divide meat mixture, sour cream, and corn between the two dishes. Top with remaining tortillas, salsa and cheese.
Cover and freeze one casserole for up to 1 month. Cover and bake second casserole at 350 degrees for 35 min. Uncover; bake 5-10 min. longer or until heated through.
To use frozen casserole: Thaw in the refrig. for 24 hours. Remove from the fridge 30 min prior to baking. Bake as directed above. About 4-6 servings per dish.

Ready in 1 hour or less
2 pounds ground beef
1/4 cup chopped onion
1 envelope taco seasoning
2/3 cup water
1 can whole kernel corn, drained
1 can condensed fiesta nacho cheese soup, undiluted
1 package (32 oz.) frozen tater tots
In a skillet, cook beef and onion over med. heat until meat is no longer pink; drain. Stir in taco seas. and water. Simmer uncovered for about 5 min. Add corn and soup and mix well.
Pour meat mixture into greased 13 x 9 x 2in. baking dish. Arrange tater tots in a single layer over the top. Bake, uncovered at 350 degrees for 30-35 min. or until tater tots are crispy and golden brown.
8 servings.
My family really liked this recipe! Easy too!

Before Payday Supper
1 lb. ground beef
1 onion, chopped
1 clove garlic, minced
1 (6 oz.) can tomatoes, cut up
1 Tbsp. chili powder
2 tsp. beef bouillon
¼ tsp. black pepper
1-3 ½ mushrooms, sliced
2 ½ c. Rotelle Pasta
Combine all ingredients into the crock pot except noodles, and mix well.. Cook on low for at least 4 to 6 hours. During the last 10 minutes of cooking, boil noodles. Serve meat mixture over noodles. Serve with garlic toast.

Cheesy Mostaccioli
1 pkg. mostaccioli pasta, cooked
1-1 ½ lbs ground beef, browned and drained
1 (11 oz.) can cheddar soup
1 (30 oz.) jar spaghetti sauce
1 tsp. black pepper
1 tsp. Italian seasoning
3 c. Mozzarella cheese, shredded
Preheat oven to 400°. Combine pasta, soup, meat and spaghetti sauce. Add pepper, seasoning, and 2 c. cheese. Mix well and place in casserole dish. Sprinkle with remaining cheese and bake for 25 minutes.

Easy Beef and Potatoes
2 lbs. Ground beef, browned
6 – 8 med. Potatoes, sliced and quartered
salt and pepper
1 onion, sliced
1 can cream of mushroom soup
1 can cheese soup
1 tsp. dried oregano
¼ tsp. pepper
Combine soups and spices. In crock pot layer potatoes, onion and meat. Pour mixture over all and cook on low for 6 to 8 hours.

8 oz. uncooked tube or spiral pasta
1 pound ground beef
6 bacon strips diced
1 can (10 3/4 oz) condensed tomato soup
1 cup shredded cheddar cheese
cook pasta according to pkg. In skillet cook beef over med heat until no longer pink, drain and set aside. In same skillet cook bacon until crisp and drain. In large skillet mix beef, bacon, soup, pasta, heat through. Sprinkle with cheese, cover and cook until melted.
Serves 4-6
I doubled this (everything except the beef and bacon) and it tasted great.
I bought 16 oz box of spiral noodles at Aldi's for $.49 and tomato soup for $.39. I bought my cheese at wal-mart.

6 oz. uncooked Fettucini noodles
1 pound ground turkey or beef
1/8 tsp. pepper
1 can (10 1/2oz) tomato soup
1 oz. grated lowfat cheddar cheese
Cook fettucini as directed by package. Drain. Brown meat. Add cooked fettucini, pepper, and soup. Cook on low heat until hot. Top with cheese. Cover and cook until cheese is melted.
(I double and triple this for my family - not always doubling the meat)

1 lb hamburger
1/2 c chopped onion (more or less to suit your taste)
fresh sliced mushrooms (however much your family likes-I usually use more than half of one of the containers they come in)
garlic powder (I just shake some in)
1 can tomato soup
1 12 oz. can tomato paste
1/2 cup LIQUID coffee (not coffee grounds like my sister used!Also, I don't usually have coffee just sitting around, so I use instant coffee to make this. The recipe DOES taste richer if you use brewed coffee, though)
1 tsp. salt
1/8 tsp pepper
1/4-1/2 tsp oregano
Brown the hamburger, onion, mushrooms, and garlic powder, drain grease. Stir in slowly: tomato soup, tomato paste, coffee, salt, and pepper. Simmer at low 30 minutes, uncovered, stirring often.
Add oregano and simmer 5-10 minutes more.
I usually make 3-4 times this amount and get 5 or 6 meals out of it. I put the sauce in 1 gallon zip-lock freezer bags and lay them flat on a cookie sheet while they freeze.

1-lb of Browned ground Beef
1 1/4 Cup of Pace Picante Sauce(Mild)
1-(4 oz.) can of mushrooms-diced
1 1/4 Cup of Hunts BBQ sauce (Hickory & Brn Sugar)
1 (tsp) of Oregano & Parsley
6 (dashes) of Savory
couple of dashes of salt and pepper
Brown Ground beef and then slowly add the mushrooms let them start to brwn then add the other ingredients. Let cook for about 15 min. on about a number 4 then their done. This makes 4 sloppy Joes. They are really good on potato Buns.

yummy italian dish, low carb too
Ingredients
1 lb (more or less as desired) low fat hamburger meat
2 zucchini cut into bite size pieces
1 small onion cut into slivers or chopped
1 small can mushrooms, or fresh mushrooms sliced
1 can diced tomatoes (don't drain) or 1 jar favorite spaghetti sauce (won't be low carb if you use canned sauce)
Sliced mozzarella (sp?) cheese
McCormicks garlic herb seasoning or any other italian garlic seasoning mix - to taste
Salt and pepper - to taste
Brown and drain hamburger meat, add veggies (except tomatoes) and sautee until they are tender, add tomatoes and simmer over med/low heat , add italian seasoning to taste, simmer, add salt and pepper to taste, simmer about 10 min to let flavors blend. Reduce heat and top with slices of mozzarella cheese, let melt. Serve from pan with spatula.(or put in casserole dish, top with cheese, and let cheese melt in oven ) Add a side salad and yummm , a great low-carb meal !!!
I can think of lots of things that could be added to this dish ! I think sausage might be good in it too !!

lb. ground beef - cooked
1 small pkg. yellow rice w/ saffron seasonings
1 can rotel
1 pkg. taco seasoning
Velveeta cheese (I usually buy the really big one and cut it in half, only using half; I think that would be 8 oz.)
1. After cooking the ground beef add the taco seasoning to it and put it in the bottom of the most shallow casserole dish that you have (needs to be pretty shallow, only deep enough to hold the ingredients of this recipe).
2. Add cooked yellow rice on top of ground beef.
3. Dice velveeta and melt together w/ rotel. Then pour over the top of rice.
4. Cook for about 5 min. at 350. Its tempting to do it for more than 5 min. but it will get thick if you do and not as good.
We love this one. I don't normally find a use for velveeta but this recipe is really good to us for some reason.

This one is really yummy!
8 oz. shell pasta, cooked and drained
1 lb. ground beef - cooked
1 qt. spaghetti sauce
1/4 lb. cheddar or colby cheese, shredded (I use 12 oz. sharp cheddar).
1 pint sour cream
Salt, pepper, garlic (or garlic powder) to taste
Layer half of the pasta, meat, sauce, cheese and sour cream. Sprinkle w/ salt, pepper, garlic. Repeat w/ second half. Bake uncovered for 40-50 mihn. at 350.

We had this one for dinner tonight; I got it off of another web site a couple of years ago.
1 family sized can Tomato Soup (or 2 regular sized ones).
1 cup sour cream (I used light).
Meatballs (I used frozen - Rozina Homestyle Meatballs).
Egg Noodles
Mix soup and 1/2 can of water (or whole can if using smaller soup cans). Add in cooked meatballs (I thawed and cooked them in the oven first). Bring to boil and simmer 10-15 min. Add sour cream and blend well. Heat until warm. Serve over egg noodles. We all liked this - even the kids!

I made this one for the first time tonight and it was very good. My husband likes pretty much everything I cook and I could tell that even he raved more about this one. Make sure to grease the muffin tin first (I just used cooking spray).
1 pkg. regrigerated buttermilk biscuits (I used regular rather than the ones that are layered).
1 pound ground beef
1/2 cup ketchup
3 tablespoons brown sugar
1 Tablespoon cider vinegar
1/2 teaspoon chili powder
1 cup shredded cheddar cheese (I just shredded 8 oz. and used about 6 of it probably).
Press biscuits into greased muffin pan. In skillet brown beef. Add all other ingredients except cheese together.
Add to cooked meat. Add meat mixture to biscuit cups. Top with cheese. Bake 375. Bake 20 min. Very yummy and easy.

We had this for dinner tonight and it was pretty good.
1 lb. ground beef
1 can refried beans
Shredded cheddar cheese (as much as you like)
cream cheese
1 pkg. taco seasoning
soft tortilla shells
salsa
Cook meat and taco mix then drain (I cooked the meat first and then added the seasoning b/c I always rinse my meat after cooking and didn't want to rinse off the seasoning). Mix meat together w/ beans and cheese (I used about 6 oz. of cheese in this part). Spread cream cheese on tortilla and put meat mixture in the middle and roll up. (I didn't do the traditional burrito type roll - I just rolled them sideways - I think that it would keep the filling in better and also it fit in the dish better that way). Put in a casserole dish and sprinkle w/ cheese (I used about 3-4 oz. this time). Cover w/ a jar of salsa and bake at 375 for about 10 min. or until cheese melts. Serve w/ sour cream.

Here's how I do it:
1 box macaroni(a regular size mac n cheese or equivalent plain elbow noodles), boiled till done
1 can corn(or equivalent frozen), drained
1 can diced tomatoes, undrained
1/2 -1 lb hamburger, browned
American cheese(or velveeta) to taste(if I've used a mac n cheese, then I use the packet that comes with that, and add a couple slices of American cheese as well).
Basically, I boil the noodles, drain them, put them back in the pot and add all other ingredients, stirring and heating till the cheese is melted. This is "comfort" food for our family:-) Not very exciting, but everyone likes it!

Layer in casserole dish or pan in order given. Bake at 1 1/2 hours at 350.

1 can mild enchilada sauce
1 c. cottage cheese
1 c. shredded cheddar cheese
Fritos
Brown beef and drain grease; set aside. Add salt, refried beans, enchilada sauce, green chilies, cottage cheese, and 1/2 cheddar cheese. Bring to a boil and stir until cheese melts. Alternate layers of meat, cheese mixture, and Fritos in a greased 2 quart baking dish. Bake at 350 for 20 minutes. Remove and sprinkle remaining 1/2 cheddar cheese on top. Bake for an additional 10 minutes until cheese melts.

Beef Goulash
1½ pounds boneless beef chuck steak, cut into 3/4-inch cubes*
2 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon garlic powder
1 can (8 ounces) tomato sauce
1 medium onion, chopped
1/2 cup water
1 tablespoon sugar
1 tablespoon paprika
2 tablespoons vinegar
2 tablespoons Worcestershire sauce
1 bay leaf
Shake beef, flour, salt, pepper and garlic in plastic bag until beef is coated. Mix beef and remaining ingredients in 2-quart casserole. Microwave, covered, at HIGH (100%) 5 minutes. Reduce power to MEDIUM (50%). Microwave until beef is tender and sauce is thickened, 50 minutes to 1 hour, stirring once or twice during cooking. Let stand 5 to 10 minutes. Serve over noodles, if desired.
*If using ground beef: Cook ground beef and onions together until ground beef is browned; drain. Mix ground beef, flour, salt, pepper and garlic and other ingredients in 2-quart casserole. Cook until sauce is thickened.

large can Baked Beans
1/2 lb. ground beef or turkey
1/2 onion, chopped
1/2 lb. bacon
Brown ground beef and onion. Meanwhile, cook bacon in microwave (place raw bacon on paper plate and 2 paper towels, cover with one paper towel - cook on hi for 3+ minutes until crisp). Crumble bacon and to hamburger, along with beans. Place in casserole dish and bake at 350 until hot.
*double this recipe for potlucks - you will bring the pan home empty!!

10 small new potatoes, halved not peeled (you may use the larger potatoes and just cut into chunks)
12 small white onions, peeled (you may use regular size onions and just cut into chunks)
30 baby carrots (1/2 pound)
1 red or green bell pepper, seeded and cut into 1 " pieces
(optional)
1 1/2 lbs beef stew meat, cut into 1 to 1 1/2 " cubes
2 cups beef broth or boullion
2 teaspoons fresh oregano leaves, chopped (you may use dried)
1/4 teaspoon Paprika
1 tablespoon fresh parsley, chopped (you may use dried)
1 tablespoon worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon salt
3 tablespoons cornstarch
3 tablespoons cold water
Place potatoes, onions, and baby carrots in slow cooker. Add bell pepper and beef. In small bowl combine broth, oregano, paprika, parsley, worcestershire sauce, salt, and pepper. Pour over meat and vegetables. Cover and cook on low 9-10 hours. Turn pot to high. In small bowl dissolve cornstarch in water; stir into cooked stew mixture. Cover and cook on high for 15 to 20 minutes or until thickened.
Stove top version (I did it this way yesterday and liked it just as well):
I dredged the stew meat in flour and browned in a dutch oven in some hot oil. I added the onions and cooked a bit. Then I added the carrots and the broth with the seasonings. I simmered for several hours on low. Since I dredged the meat in flour I did not need to use the cornstarch at the end. It was just the right thickness already.
This is VERY yummy and good served with biscuits or homemade bread and a salad.

1 # ground beef, browned
6 medium potatoes, peeled and cubed
1 16 oz bag of baby carrots ( I didn't have these on hand so I just cut up some carrots.)
3 cups water
1 packet of dry onion soup mix
1 garlic clove, minced
1 1/2 tsp Italian seasoning
1 1/2 tsp salt
1/2 tsp. garlic powder
1/4 tsp. pepper
1 can tomato soup ( I used an extra can of tomatoe paste)
6 oz can of tomato paste
1. Combine all ingredients except tomatoe soup and paste in slow cooker.
2. Cover and cook on high 3 1/2 to 4 hours on high.
3. Stir in soup and paste.
4. Cover and cook on high 1 hour more.
To add more color and vegetables to the stew, 1 1/2 cups frozen peas can be added in step 3.
8-10 servings

No amounts here; when I make this it is with a package of ground beef about 1.5-2 lbs. Makes a 13x9 dish or two smaller baking dishes full.
Brown ground beef; add taco seasoning per directions.
Chopped onions
Large pack of shredded cheese - I use cheddar/jack
Have the above ready and then
heat corn tortilla in hot oil for a few seconds each side. Drain on towel. Fill with beef, onion and cheese and roll. Place in baking dish. Repeat until dish is filled - leave some beef remaining for gravy. Top enchiladas with extra cheese. Bake at 350 til hot and cheese is melted.
Gravy/sauce - leave some beef in the pan. Add water, more taco seasoning (not a whole package!!), chili powder, and other spices (I usually use a dash of cinnamon too). Heat to a boil. Should be a rich brown color. Make a paste of flour and water - add to gravy but not too much! Gravy should be a little bit runny.
Once enchiladas come out of oven, serve with gravy on top.
Side note: gravy can be placed on the enchiladas before baking, but I find this makes my tortillas mushy.

Lasagna
1lb. lasagna noodles
24oz mozzarella cheese
1 can of parmesan cheese
1 15oz riccotta cheese
1 3lb jar of spagetti sauce, your preference
Half lb of pizza pepperoni.
Cook lasagna noodles for 10 min, drain, rinse with cold water. Brown hamburg, chop and drain grease. Add spagetti sauce. In 9" x 13" bake pan layer noodles, sauce mixture, pepperoni, ricotta cheese, mozzarella cheese, and sprinkle parmesan. Repeat 2 more times.
Bake at 350 for 1hr.

Meatballs
2 slices of white sandwich bread (crusts discarded), torn into small cubes
1/2 cup buttermilk or 6 tablespoons plain yogurt thinned with 2 tablespoons sweet milk
3/4 pound ground chuck or 1 pound if omitting ground pork
1/4 pound ground pork mixed with ground chuck
1/4 cup grated Parmesan cheese
2 tablespoons minced fresh parsley leaves
1 large egg yolk
1 small clove of garlic , minced (1 teaspoon)
3/4 teaspoon table salt
ground black pepper
vegetable oil for pan-frying (about 1 1/4 cups
1. For the meatballs: Combine bread and buttermilk in small bowl, mashing occasionally with fork, until smooth paste forms, about 10 minutes.
2. Mix all meatball ingredients, including bread mixture and pepper to taste in medium bowl. Lightly form 3 tablespoons of mixture into 1 1/2-inch round meatballs; repeat with remaining mixture to form approximately 14 meatballs. (Compacting them can make the meatballs dense and hard. Can be placed on large plate, covered loosely with plastic wrap, and refrigerated for several hours.)
3. Heat 1/4 -inch vegetable oil over medium-high heat in 10- or 11-inch sauté pan. When edge of meatball dipped in oil sizzles, add meatballs in single layer. Fry, turning several times, until nicely browned on all sides, about 10 minutes, regulating heat as needed to keep oil sizzling but not smoking. Transfer browned meatballs to paper towel--lined plate; set aside. Repeat, if necessary, with remaining meatballs.
Enjoy however you like! I make a ton of these at one time, and freeze in ziplock baggie for whenever. Make 'em extra big for Meatball subs. Dh's love this! Top with spaghetti sauce, and provolone cheese and put under broiler to melt cheese.

3-4c sliced potatoes
2 Tbsp marg
1/2 tsp salt
1lb ground beef
10oz corn
1 can cream of mushroom soup
1/3c milk
1/4tsp garlic powder
onion
pepper
shredded cheddar cheese
Toss potatoes with butter and salt.
Arrange in bottom of greased 8x12 pan. Bake at 400 for 25-30min.
Meanwhile, brown ground beef. Cover potatoes with beef and corn.
Combine remaining ingredients and pour on top. Cover with cheese.
Bake 20-30min.

1c uncooked minute rice
1lb lean ground beef, browned
1 small onion, chopped
1 green bell pepper, finely chopped
1 can undrained corn (or green beans.)
1 can (28oz) Tomatoes
1/2lb grated cheddar cheese
Brown beef and onion in a frying pan. Drain. In large casserole dish layer: uncooked rice, beef, onion, gr.pepper, corn (or gr.beans) then tomatoes. Sprinkle cheddar cheese on top. Cover and bake at 350 for 30-40min.
***You can substitute a large can of your favourtie spaghetti sauce for the tomatoes if you wish.***

1 tsp salt or seasoning salt
¼ tsp pepper
1 can whole kernel corn, drained (or 2 cups frozen)
1 can tomato soup (10 oz can)
1 cup shredded cheddar or American cheese
Preheat oven to 350º. Brown ground beef and onion; drain. Stir in salt, pepper, corn and soup. Pour mixture into a 2 qt casserole dish. Mix together potatoes and cheese. Spoon over meat mixture. Bake 30 - 40 minutes or until lightly browned.

several sliced of american or velveeta cheese
1 tube refrigerator biscuits
Preheat oven to 375º.
Add tomato sauce to ground beef. Place into a 2 qt casserole dish. Place cheese slices on top of meat mixture. Put biscuits on top of cheese. Bake until biscuits are done (approx 20-25 minutes).
* you can add a drained can of corn or green beans to the meat, too.

My Mom's recipe...

Take one beef brisket and poke it all over with a fork. Rub minced garlic liberally all over the meat. Sprinkle with Old Hickory Smoked Salt on both sides and massage the meat.
Place meat into a large zipper bag and add one can of beef broth and one bottle of heinz 57 sauce (I substitute Kroger 1883 sauce because it is the same only cheaper). Gently squeeze out all the air from the bag and close it tightly. Place the meat in the fridge for 24 to 48 hours, flipping it over a few times to properly marinate all the meat.
Take it out of the marinade and put it into a crockpot on low for 6-8 hours, the oven at 300 for 4-6 hours, or on the grill (the best way) off to the side of the coals for low heat for about 2-4 hours. If you put it on the grill baste the meat with a mixture of 1/2 cup oil and 1 Tbsp.lemon juice every 30 minutes. Pour the marinade into a sauce pan, add one bottle of bbq sauce and bring to a boil. Reduce heat and simmer for 20 minutes. Serve with the slices of brisket.

Here's 2 ways that I use.

#1. Put brisket, fat side up, (be sure the butcher doesnt' trim the fat off, this will make your built in baste) in the oven at 275* when you go to bed and it will be done when you get up the next morning. The only problem is you want to eat it for breakfast.
#2. Put brisket, fat side up, in the oven at 275* for 4 hours, then put into a smoker for 3-4 hours.
Serve with mustard potato salad, beans, and Texas toast.
I never marinade, because the slow basted cooking keeps it moist and soooo good.
We introduced this to our Chicago friends who had only had corn beef brisket.
wildwood143 recommended cooking it at 325. very tender.

Just something different and doesn't take much to whip together:
1 lb ground beef
1/c cup chopped onion
1/2 cup chopped bell pepper (color of your choice)
2/3 cup water
1 envelope taco seasoning
1 can (15 oz) black beans, drained and rinsed
1 can Rotel style tomato sauce
6 flour tortillas (10 size)
1 (15 oz) can refried beans
3 cup shredded cheese (your choice on the flavor, I've used everything from sharp and mild cheddar, spicy pepper jack, colby/jack, etc)
Brown beef, onion, bell pepper - drain. Add taco mix & water, bring back to a boil, reduce & add black beans and tomatos. Remove from heat.
Grease 9X13 - 2 tortillas in bottom, spread with half can of refried beans, half meat mix, and 1 cup of cheese. Repeat another layer. Top with tortillas and cheese. Cover and bake 350 degrees for about 30 minutes or until heated through and bubbly.
Yields either 9 or 12 servings...but it's a heafty chunk at 9 servings. Serve with sour cream or ranch dressing and more salsa.

I can help with that one!
It is best to use very thinly sliced beef (easier to cut when it is partially frozen). I use London Broil when it's on sale (I also buy it at the Korean store, frozen rib eye)
They key is marinating the meat preferably over night:
1 1/2 lbs beef
1/2 cup sugar
1/2 cup soy sauce
3 TB garlic minced
2 TB sesame oil
1 tp black pepper
2-4 thinly sliced green onions
mixed everything together, marinate, cook over medium high heat, serve with steamed rice and other sides

Lazy Beef Lasagna
50 to 65 minutes
Ingredients:
1-1/2 pounds ground beef (90% to 96% lean)
1 tablespoon minced garlic
1/2 teaspoon salt
1/4 to 1/2 teaspoon ground nutmeg
1/4 teaspoon pepper
1 jar (26 ounces) prepared pasta or marinara sauce
1-1/2 cups water
1 package (20 to 25 ounces) refrigerated or frozen cheese ravioli
1 cup shredded Italian cheese blend
Instructions:
1. Heat oven to 400°F. Brown ground beef with garlic in large nonstick skillet over medium heat 8 to 10 minutes or until beef is not pink, breaking up into small crumbles. Pour off drippings.
2. Stir in salt, nutmeg and pepper; mix well. Stir in pasta sauce and water; bring to a boil. Cook 1 to 2 minutes, stirring occasionally.
3. Layer ravioli, beef sauce and cheese, 1/2 at a time, in 13 x 9-inch glass baking dish; cover with aluminum foil. Bake in 400°F oven 15 minutes (20 minutes if using frozen ravioli). Uncover; continue baking 15 to 20 minutes or until sauce is bubbly and pasta is tender.
4. Let stand 5 minutes before serving.
Makes 6 to 8 servings.

This by no means the traditional style but I made this last night, it was quick and I wanted to share.
I made this last night with left over chopped beef.
I took
1 pound of mashed potatoes( I used instant idahion potatoes)
1 pound of shredded beef heated through
shredded cheddar cheese
sea salt
I took the cooked mashed potatoes and spread on the bottom
added the shredded chopped beef.
Added a little sea salt to the beef and then topped with shredded cheddar cheese. The heat from the beef and potatoes melted the cheese on top. My kids really digged into it. My daughter loves shepherds pie and told me that this one was really good. So I am on to something here and will make this always from our left over chopped barbeque beef nights the night before.
To get their greens in, we served salad with it.

Beef Stroganoff in the Oven
1 pound round steak cut into strips (I used 1.5 because my family loves beef)
can cream of mushroom soup
can cream of celery soup
packet of onion soup mix
1/2-1 C sour cream
Mix together and cook for 3 hours at 300 degrees.
Serve over noodles or rice.
Wonderful aroma all afternoon in the house!!

Beef & Broccoli
3/4 pound broccoli
1 pound lean boneless beef steak
2 tablespoons soy sauce
1 clove garlic, mined or pressed
Cooking Sauce (recipe follows)
1/4 cup oil
2 tablespoons water
Cut off and discard tough ends of broccoli stalks; peel stalks, if desired. Cut tops into small flowerets; slice stalks 1/4 inch thick. Set aside.
Cut beef with the grain into 1½-inch-wide strips, then cut each strip across the grain into ¼-inch-thick slanting slices. In a bowl, mix beef, soy, and garlic. Let marinate for 15 minutes. Meanwhile, prepare Cooking Sauce and set aside.
Place a wok (or large frying pan) over high heat; when wok is hot, add 1 tablespoon of the oil. When oil is hot, add half the meat mixture and stir-fry until meat is browned (2 to 3 minutes); remove from wok and set aside. Repeat to brown remaining meat, using 1 tablespoon more oil.
Pour remaining 2 tablespoons oil into wok. When oil is hot, add broccoli and stir-fry for about 1 minute. Add water, cover, and cook, stirring frequently, until broccoli is tender-crisp (about 3 more minutes). Stir Cooking Sauce, then add to work along with meat; stir until sauce boils and thickens. Makes 3 or 4 servings.
Cooking Sauce: Stir together 1½ tablespoons cornstarch, 1/4 teaspoon ground giner, a dash of ground red pepper (cayenne), 2 tablespoons dry sherry, and 1¼ cups regular-strength beef broth. (If you don't have sherry, just add 2 more tablespoons of broth).

1 pound beef flank steak or boneless sirloin steak
1 tablespoon vegetable oil
1 teaspoon cornstarch
1 teaspoon salt
1 teaspoon sugar

1/8 teaspoon white pepper
8 ounces Chinese pea pods
2 green onions with tops
1/4 cup cold water
1 tablespoon cornstarch
1 tablespoon soy sauce
3 tablespoons vegetable oil
1 teaspoon finely chopped gingerroot
1 teaspoon finely chopped garlic
2 tablespoons vegetable oil
1 can sliced bamboo shoots, drained
1 jar sliced mushrooms, drained
1/2 cup beef broth
Trim fat from beef; cut beef with grain into 2-inch strips. Cut beef across grain into 1/8-inch slices. Toss beef, 1 tablespoon oil, 1 teaspoon cornstarch, the salt, sugar, 1 teaspoon soy sauce and the white pepper in glass or plastic bowl. Cover and refrigerate 30 minutes.
Remove strings from pea pods. place pea pods in boiling water. Cover and cook 1 minute; drain. Immediately rinse under running cold water; drain. Cut green onions into 2-inch pieces; cut pieces lengthwise into thin strips. Mix water, 1 tablespoon corn starch, and 1 tablespoon soy sauce.
Heat wok or large skillet until 1 or 2 drops of water bubble and skitter when sprinkled in wok. Add 3 tablespoons oil; rotate wok to coat sides. Add beef, gingerroot and garlic; stir-fry until beef is brown, about 3 minutes. Remove beef from wok.
Add 2 tablespoons oil to wok; rotate to coat sides. Add bamboo shoots and mushrooms; stir-fry 1 minute. Stir in beef broth; heat to boiling. Stir in beef; heat to boiling. Stir in cornstarch mixture; cook and stir until thickened, about 30 seconds. Add pea pods; cook and stir 30 seconds. Garnish with green onions. Serve with hot rice. Makes about 5 servings.
*Note: If you don't have the veggies listed above substitute the same amount of any veggies you have on hand. If you use carrots, slice in julienne strips (very thin).

Texas-Style Chicken Fried Steak with Cream Gravy
* 4 cube steaks
* 1 egg
* 1/4 cup milk
* all-purpose flour
* cooking oil or melted Crisco
* 1/2 teaspoon salt
* 1/4 teaspoon ground black pepper
* 1/4 teaspoon paprika
* 1/4 teaspoon white pepper
Beat together the egg and milk and set aside. Mix together the salt, black pepper, paprika and white pepper and sprinkle on both sides of the steaks.
Dredge the steaks in the flour, shaking off the excess. Then dip each cutlet in the egg/milk mixture, then back in the flour. (You're going to get your hands messy here, so take your rings off.) Set steaks aside on a piece of waxed paper.
Heat the cooking oil in a large cast-iron or other heavy skillet over medium-high heat for a few minutes. Oil should be about a half-inch deep in the pan. Check the temperature with a drop of water; if it pops and spits back at you, it's ready.
With a long-handled fork, carefully place each steak into the hot oil. Protect yourself (and your kitchen) from the popping grease that results. Fry steaks on both sides, turning once, until golden brown. Reduce heat to low, cover and cook 4 or 5 minutes until steaks are done through. Drain steaks on paper towels.
Cream Gravy
After the meat is removed from the pan, pour off all but about 2 tablespoons of oil, keeping as many of the browned bits in the pan as possible. Heat the oil over medium heat until hot.
Sprinkle 3 tablespoons flour (use the left-over flour from the chicken fried steak recipe in the hot oil. Stir with a wooden spoon, quickly, to brown the flour.
Gradually stir in 3/4 cup milk and 3/4 cup water, mixed together, stirring constantly with the wooden spoon and mashing out any lumps. Lower heat, and gravy will begin to thicken. Continue cooking and stirring a few minutes until gravy reaches desired thickness. Check seasonings and add more salt and pepper according to your taste.

cheese enchiladas with chili con carne
what you need
thick white corn tortillas
mexican shredded cheese ( a blend of a few cheeses)
onions
2 cans of your favorite chili con carne without beans or 32 ounces of homemade chili
non stick spray
casserole dish
oil*optional
fry pan
You can first either dip each tortilla in olive oil in a small fry pan, coating it in warm oil or you can heat tortillas in microwave for 2 minutes which I do because it saves in calories.
First take large casserole dish and spray with cooking spray, set aside.
Then take 1 cup of onions and fry in pan with cooking spray. Cook till tender. Set aside.
Take hot tortillas and put 3 tablespoons of cheese( I usually do about a handful) and put in a teaspoon of cooked onions in each tortilla. Then fold and place seam down in casserole dish.
Continue doing this* If you are dipping in oil, dip the tortilla in oil individually then immediatly place ingredients in each enchilada.
Add your favorite chili on top with the rest of the cooked onions if any are left. Place foil on top of dish and place in oven for 375 for about 45 minutes.
Take out and top with more cheese, replace foil and let cool tableside for about 10 minutes.

Need:
1 pound of ground beef
1 can cream of chicken soup
2 1/2 cups crushed tortilla chips, divided
1 jar of salsa
1 1/2 cups shredded chedder cheese (I use taco cheese sometimes)
Brown the meat and add the soup.
Grease a 9 x 13 pan and put enough crushed tortilla chips in it to cover the bottom.
Top this with the meat/soup mixture.
Put salsa on top of the meat.
Put cheese on top of the salsa.
Bake at 350 degrees for 25-30 minutes or until bubbely.
Sprinkle the remaining chips on top and bake for 3 more minutes (I end up using more than 2 1/2 cups of chips).

Ingredients:
6 fat green bell peppers
3/4 pound extra-lean ground beef
1 7-oz box Spanish-rice mix
1 14-oz can Italian-style diced tomatoes
1/2 cup chopped onion
2 clove garlic,
2 teaspoon olive oil
1 8-oz can Italian-style tomato sauce
Instructions:1
Cut off the tops of the peppers and toss the cores and seeds. Stand the peppers in an 8" x 8" microwavable dish, add 2 Tbsp water, cover with plastic wrap, and nuke for 3 to 5 minutes. Next, remove the peppers and discard the water. Chop the pepper tops and mix with the onion, garlic, and oil in the dish. Heat for 3 to 5 minutes, or until soft. Stir in the beef and cook for 2 to 3 minutes, until the meat is browned. Mix in the rice and microwave for 2 to 3 minutes. Stir in the seasoning packet, the tomatoes, and 1 c water. Cover with plastic wrap and nuke for 15 to 18 minutes, or until the rice is tender. Fill the peppers with the mixture, put them in the dish, and pour the tomato sauce over the tops. Heat for 2 to 3 minutes, or until the sauce is hot.

2 cups chopped celery
Brown the meat and drain, set aside. Saute onion, g pepper, and tomatoes. Add seasonings and cook for eight mins. Transfer to crock pot. Add the meat, beans, and celery. Cook for four hours on low.
I like to put fritos in a bowl and top with the chilli, chesse, sour cream, and green onions.

Rolled Tacos...

Easy, but do require shallow frying..
Left over roast- Sliced into long slices (I use 1/2 of a roast and cook it for this purpose with cumin, salt and pepper)
Lettuce- sliced in same fashion as lettuce
Corn Tortillas- warmed so you can work with them
Wrap a few slices of roast and lettuce in corn tortilla and put in frying pan of hot oil... cook until golden turning once.
Serve with salsa, sour cream and guacamole.

I buy those shredded hashbrowns..usually have some in the freezer. I cook them as directed, and then when they are almost done, I put in the sliced sausage and brown a bit. Then I scoop that all to the side and scramble an egg or 2. Then I mix it all up. We eat ours with salsa on top, but I have sprinkled shredded cheese over it all too.

Then we sprinkle cheddar cheese on top and garnish with sour cream (me) or hot sauce (dh)

1 Can Cream of Mushroom Soup
1 1/2 Cups of water
1 Tablespoon Butter or Margarine
1 Pound Kielbasa, cut into 1/2 inch pieces
3/4 Cup uncooked long grain rice
10 ounces frozen peas
4 1/2 ounces sliced mushrooms, drained
1 Cup shredded cheddar cheese
In a skillet, combine soup, water and butter; bring to a boil. Add kielbasa and rice. Reduce heat; cover and simmer about 18 minutes or until rice is almost tender. Stir in peas and mushrooms. Cover and simmer 15 minutes or until rice is tender and peas are heated through. Sprinkle with cheese; cover and let stand until melted.
I usually cut it up and cook it and serve it with rice!!
I usually cut it up and brown it with some onion (omit of course if your peeps wont eat onion) , then add a can of diced tomatoes, a head of fresh broc. chopped up, and some salt and basil to taste, cover the skillet until the broc is tender/crisp and the tomatoe has condensed some. Then I pour this into a big bowl with some cooked rotini noodles, stir it all up and viola. (sometimes when I put the tomatoes/salt/basil in I add a dash of sugar, sometimes depends on who is eating it).
Of some red potato slices and fresh green beans. Salt and pepper to taste. Steam the whole thing until the potatoes are cooked through. The green beans get really cooked, so if you dont like them kind of mushy add them later.

Yes, I use ground beef! I fry it up with garlic, basil, onions (usually minced from the pantry and not fresh) and whatever else I think might taste good! Dump it in a casserole dish! Open a can of cream style corn and dump on top! If it's alot of meat I sometimes use 2 cans! Sometimes I add frozen corn to that but not usually! Cook & mash potatos as I regularly would and dump those on top of everything! Sprinkle with parmesan cheese, salt & pepper! Bake at 350 for 30 minutes or so!!
The kids love it and Joshua lives on it! So easy!!

Marinade:
2 tsp. soysauce
1 TBSP wine or cooking wine(sherry)
1 TBSP cornstarch
1 TBSP oil
ADD: 1 pound of beef, thinly sliced in bite size pieces. Marinate for at least 15 minutes. I've done it at short as 15 minutes and as long as 2 hours ahead of time.
Separate 1 pound broccoli florets... if you use the stem, slice it thinly.
Cook for 1 minute in boiling salt water. Drain, rinse with cold water. If you use frozen broccoli, like i tend to do now, i just nuke it til it's partially warmed.... it's already been blanched once...
Heat 3 Tbsp. oil in wok, large skillet, or large pot.
ADD: 2-3 cloves chopped garlic and 3-4 slices ginger root.
Stir for 15 seconds.
THEN add beef, stir fry until beef turns color and is no longer red. *if i don't have fresh ginger root i have a tube of ginger that i just squeeze some out of... when stir frying the meat is when i add it. also, stilljulie says you can freeze ginger root and then it lasts forever*
OK, so once the meat has turned color add the broccoli, 2 tsp. sugar and 2 TBSP soysauce. Stir fry one minute more til all is HOT.
EAT over RICE!
my kids LOVE IT... even the broccoli! actually most ESPECIALLY the broccoli!

Cincinnati Chili Recipe
1 large onion chopped
1 pound extra-lean ground beef
1 clove garlic, minced
1 tablespoon chili powder
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground cumin
1/2 teaspoon red (cayenne) pepper
1/2 teaspoon salt

1 (15-ounce) can tomato sauce

1 tablespoon cider vinegar
1/2 cup water

In a large frying pan over medium-high heat, saute onion, ground beef, garlic, and chili powder until ground beef is slightly cooked. Add allspice, cinnamon, cumin, cayene pepper, salt, unsweetened cocoa or chocolate, tomato sauce, Worcestershire sauce, cider vinegar, and water. Reduce heat to low and simmer, uncovered, 1 1/2 hours. Remove from heat.
Cook spaghetti according to package directions and transfer onto individual serving plates (small oval plates are traditional).
Ladle chili over spaghetti and serve with toppings of your choice. Oyster crackers are served in a separate container on the side.

salsa beef skillet (homemade hambuger helper)
1 lb ground beef
2 cups water
1 cup salsa
1 pkg Kraft Deluxe mac n cheese
2 cups frozen corn
1/2 c shredded cheddar or mexican cheese

Salisbury Steak

shape into 4 1/2 inch thick oval patties
heat skillet over med high heat cook 3 to 4 on each side

2 c. crushed corn chips
1-2 lb. taco meat
1 c. sour cream
2 c. cheddar cheese
Spray the bottom of a 9x13 pan and line with the puff pastry. Sprinkle 1 c. of crushed corn chips on the pastry. Then layer the taco meat, sour cream, and the rest of the corn chips. Top with the cheddar cheese. Bake at 375 about 45-60 minutes or until puff pastry is golden brown.

brown meat... salt and pepper liberally
leave grease and add 2 tbsp. flour

add 1 cup sour cream... stir in.

Pizza burgers
brown meat (w or w/o onion)
drain grease
add 1 can tomato soup
add 2 tsp. basil and 2 or 3 tsp oregano
let cook for 10 min or so on low.
turn heat off.
let cool some.
then add 1 cup mozz. cheese and 1/2 cup cheddar cheese.
broil on any kind of bun or toast til cheese melts.

Taco Pie
1/2 lb. lean ground beef or turkey
1 deep-dish pie crust
1 packet taco seasoning
1 can refried beans
1 8 oz jar salsa
shredded cheese (Mexican blend)
crushed tortilla chips
Diced tomato, lettuce, sour cream, black olives, etc.
Bake pie crust according to package directions. Brown ground beef; drain. Add taco seasoning and 1/3 to 1/2 cup water. Stir to coat.
Mix beans and salsa in bowl.
Spread bean mixture in bottom of pie crust. Add half the ground beef.
Top with tortilla chips and cheese.
Repeat with a second layer of ingredients.
Bake at 350 degrees for about 20 minutes, or until the cheese
is melted. Let cool for about 10 minutes.
Slice as you would a pie, and top with lettuce, tomato, sour cream, and any other taco condiments you desire. Add a green salad for a very filling meal.

MEATY SPAGHETTI SAUCE
1 lb. ground beef
1 lb. bulk italian sausage
1 medium green pepper, chopped
1 medium onion, chopped
8 garlic cloves
2 cans (14.5 oz each) italian diced tomatos
2 cans (15 oz each) tomato sauce
2 cans (6 oz each) tomato paste
1/3 cup sugar
2 tablespoons italian seasoning
1 tablespoon dried basil
2 teaspoons dried marjoram
1 teaspoon salt
1/2 teaspoon pepper
In large skillet over medium heat, cook beef & sausage til no longer pink! Transfer to slow cooker (crock pot... whatever) and add everything else! Cover and simmer for 8 hours or so!
Now... here's what I do !!
No onions or peppers... I dump in some minced dried onions if I have them!
No italian diced tomatos unless I happen to have that kind... I just use regular ol' diced tomatos (I always buy the petite ones)
Never use fresh garlic... altho I bet it's even yummier with that!!
Never use that much meat! I use 1 bulk sausage (usually hot or sage by Jimmy Dean... or sometimes maple... kids LOVE the maple one )! I use hamburger if I have some on hand... not a whole pound usually tho... sometimes none!
I usually only use 2 cans of the diced, 1 can of paste and 1 can of sauce when I only use the 1 lb. of meat!!
Never use marjoram... don't have any!!
Usually use more basil than called for... love basil!
I've always been asked for the recipe when I serve it to company and I feel bad cause I never follow the recipe!!

1/4 c. Ritz cracker crumbs, fine
1/8 tsp black pepper
1/2 tsp seasoned salt
1/2 tsp each garlic powder and onion powder
1 tsp worcestershire sauce
Mix together and form into 8 patties. Fry in 1 tbls olive oil til browned, about 4 minutes per side. Remove from pan.
In pan add 1 cup thinly sliced onion. Over this sprinkle 2 tbls flour. Stir together. Gradually add 1 cup of beef broth and 1/2 tsp seasoned salt. Simmer and stir 5 minutes. Add beef patties to mixture and simmer for 15-20 minutes.

Increase heat to medium-high and add half the beef; cook, breaking up pieces with wooden spoon, until no longer pink and just beginning to brown, 3 to 4 minutes. Add remaining beef and cook, breaking up pieces with wooden spoon, until no longer pink, 3 to 4 minutes.
2. Add beans, tomatoes, and 1/2 teaspoon salt; bring to boil, then reduce heat to low and simmer, covered, stirring occasionally, for 1 hour. Remove cover and continue to simmer 1 hour longer, stirring occasionally (if chili begins to stick to bottom of pot, stir in 1/2 cup water and continue to simmer), until beef is tender and chili is dark, rich, and slightly thickened. My own simple recipe:
Brown tender cut steaks in olive oil, salt and pepper and flour
Place in the bottom of crockpot. Top with 4-5 minced garlic cloves and one chopped onion. Top with potatoes and carrots or whatever veggies you want. Cook on low. You can add a bit of flavor by adding a few dry bay leaves.
My steaks fall apart and the kids can eat them. I don't add any liquid. They make their own liquid.

Peel several potatoes and cut into chunks. Dump in a 2 pound bag of mini carrots. Chunk 2 onions on top of carrots. Take 3 pounds of hamburger and form into meatballs. Put on top of veggies. Mix 1 TBSP salt, 1 cup ketchup, 1/2 cup vinegar, 1 TBSP basil and 1/2 cup water. Pour over meatballs and cook on high for 4 to 6 hours in the crockpot or 8 to 10 hours on low.

Uptown Down-Home Chili
3 tablespoons extra-virgin olive oil, divided
2 pounds ground sirloin
2 tablespoons grill seasoning (recommended: McCormick's Montreal Steak Seasoning) a palm full
1/2 pound baby Portobello mushrooms, chopped
1/4 pound shiitake mushroom caps, sliced
1 medium yellow skinned onion, chopped
3 ribs celery, chopped
4 to 6 cloves garlic, chopped
2 tablespoons Worcestershire sauce
2 canned chipotle peppers in adobo, chopped, with their juices or 1 generous palm full ground chipotle chili powder, about 2 tablespoons
1 tablespoon ground cumin, half a palm full
1 bottle imported beer (I use beef broth instead)
1 (15 ounce) can black beans, drained
1 (15 ounce) can crushed tomatoes
1 cup beef stock (8-ounce box)
2 to 3 tablespoons fresh thyme leaves
8-ounce piece smoked Gouda, shredded
1 small white onion, finely chopped
Heat a deep, large skillet or a pot over high heat. Add 2 tablespoons extra-virgin olive oil and the meat. Season it with grill seasoning and sear it up, browning and crumbling it, for 3 to 5 minutes. Transfer meat to a plate and return pot to stove. Reduce heat to medium- high and add another tablespoon extra-virgin olive oil. Add the mushrooms and begin to brown them before adding the other veggies. After 2 or 3 minutes the mushrooms will begin to shirk and soften. Push the mushrooms off to one side of the pot and add all the remaining veggies to the opposite side of the pot surface. Once the onions, celery, peppers and garlic have been working for a few minutes as well, mix the veggies with the mushrooms. Add the meat back, season with Worcestershire sauce, chipotle in adobo or chipotle powder and cumin. Add in beer to deglaze the pot, scraping up all the pan drippings. Reduce the beer by half, about 2 minutes. Add the black beans, tomatoes, stock and thyme to chili and simmer 10 minutes for flavors to combine. Taste to adjust seasonings. Top bowls of the chili with shredded smoked Gouda and finely chopped raw onions.

2. In a skillet, brown ground beef and drain off fat. Add onion, celery, green pepper, and sour cream. Simmer for 10-12 minutes.
3. Preheat oven to 350°. Transfer meat mixture to a large casserole dish. Add noodles to the meat mixture. Add package of taco seasoning and stewed tomatoes. Stir until well blended. Bake at 350° for 45 minutes to 1 hour, until hot and bubbly.
Yield: 5 cups, 10 servings (1/2 cup serving)

Note: I used a 12 oz. box for my large family, and used about a half of a green pepper ( I didn't measure). I think it's also easier to distribute the taco seasoning, by mixing it into the meat mixture before you add it to the noodles. I let my kids top it with shredded cheddar cheese. YUM! For us I used whole wheat noodles also.

TATER TOT CASSEROLE
1 can cream of mushroom soup
8 oz. sour cream
1 bag tater tots
1 cup shredded sharp cheddar cheese
1 lb of ground hamburger meat
serves: 6 or 7
Brown hamburger meat. Add cream of mushroom soup, sour cream and cheese. Stir together until blended.
Place hamburger mixture in the bottom of a casserole dish. Lay tater tots neatly on top of the mixture.
Place in oven on 350° for 30 minutes, or until tater tots are brown and the mixture is bubbly.

Burgundy(1-2 cups/1 per sirloin)
fresh minced garlic(1 tsp)
1Tblsp. Si-Si Cilantro from Tastefully Simple
1Tblsp. black pepper
1/2-1c. olive oil.
Pound on your sirloin with a meat mallet with the rough side. Place in Ziplock and suck all the air out as best you can. Leave on counter for 20 minutes while grill is heating up. Cook on grill to your liking.
SOOO good, and EASY!

Inside-Out Bacon Cheeseburgers with Grilled Green Onion Mayo Recipe courtesy Rachael Ray
5 slices bacon, chopped
4 scallions, cleaned and trimmed
Extra-virgin olive oil, for drizzling
1 1/3 pounds ground beef sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning blend or coarse salt and black pepper
1/2 pound extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or reduced fat mayonnaise
1 teaspoon ground cumin
Salt and pepper
4 crusty Kaiser rolls, split
4 leaves crisp romaine lettuce
Preheat grill pan over high heat.
In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side. Remove from heat to cool.
Combine ground beef with Worcestershire and steak seasoning or salt and pepper. Divide meat into 4 equal parts. Combine cheese crumbles and cooked bacon. Take 1/4 of the meat in your hand and make a well in the center of it. Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling. Make sure the fillings are completely covered with meat. When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan. Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally. Do not press down on burgers as they cook. Transfer burgers to a plate and let them rest 5 minutes before serving.
Chop cooled, grilled green onions and add to a food processor. Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise. Season with salt and pepper, to your taste.
Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise. As you bite into the burgers, you will find a smoky, cheesy surprise at the center.

Browned a pound of hamburger, sprinkled in some italian seasoning, added two cups of water, 1.5 cups of uncooked rotini, simmered that til the noodles were cooked, added one can of tomato paste, and one can of italian seasoned diced tomatoes. We'll sprinkle mozzarella and/or parmesan cheese on top.
I also stirred in some pepperoni.

Mom's Swiss Steak:
Use 1/2-3/4 pound of tenderized round steak per person. Cut into approximately 3" x 5" pieces. Coat both sides with flour. Brown both sides in pan with cooking oil on medium high heat. Add enough water to cover. Put in 1/3 pound of carrots per person. Add sliced onions if desired. Turn temperature down to medium low and simmer for 2-3 hours, til carrots are tender and meat is cooked.

Beef and Noodle Bowl
1# cube steak floured and salt and peppered (I use pan-searing flour from Wegmans-a local grocery store, it has white pepper and sea salt and certain kinds of flour in it)
3/4 pound angel hair pasta (uncooked)
3 c. broccoli florets
1/2 c onion, sliced pole to pole
3 med carrots, peeled and sliced (I left this out no one here likes cooked carrots but me and I had none, so oh well!)
2 tsp oil (I did no oil in a nonstick pan)
1/2c zest Italian dressing
1/2 c teriyaki grilling sauce by McCormack...this is soo good!)
1tsp ground ginger rehydrated in 2 tsp water
3 cloves *sliced* garlic
Cook pasta accord to package, in the last two min, add broccoli and onion. Drain pasta mixture.
Meanwhile, heat oil in large nonstick skillet, add meat and brown, cooking on both sides. Take meat out. Let set while you make sauce: dressings, garlic and ginger and cook until sauce thickens, stirring with whisk, about 1 -2 minutes.
Toss with pasta and additional soy sauce if it isn't salty enough for ya!

Here are a couple of recipies I use frequently that call for ground turkey specifically. The kids love them both!
TURKEY MEATLOF
2 pounds lean ground turkey
1 cup water
1 package (6-oz.) stuffing mix (I use cornbread or sage)
2 eggs, beaten
1/2 cup barbecue sauce, divided
Preheat oven to 375°F.
In a large bowl mix meat, water, stuffing, eggs and half of barbecue sauce. Shape into an oval loaf in a 13x9x2-inch baking dish; top with remaining barbecue sauce.
Bake until center is no longer pink, about 1 hour.
TACO STEW
2 cups chicken broth
1 pound ground turkey, cooked and crumbled
1 can (15.25-oz.) corn, drained
1 can (15-oz.) black beans, drained
1 1/2 cups Salsa
1 cup chopped onion (I omit this because of kids)
1 can (4-oz.) Diced Green Chiles, drained
1 tablespoon finely chopped cilantro
1 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon crushed oregano
1 cup tortilla chips, broken into pieces
COMBINE chicken broth, turkey, corn, black beans, salsa, onion, chiles, cilantro, cumin, chili powder and oregano in medium saucepan. Bring to a boil.
Reduce heat to medium; cook for 15 to 20 minutes. Season with salt and ground black pepper. Garnish with tortilla chips. Add sour cream if kids say its too spicy.
Serving Size: 4

Hi! I have a quick an easy meatball recipe for you. My hubby and kids love it
one pound of ground beef or turkey
2 eggs
1/2 cup of oatmeal or bread crumbs
1 tsp. salt/pepper
1small onion or dash of onion salt
1-tsp wocheshire sauce
mix together, roll into balls and bake in 425 degree oven for 20-25 minutes..
top with 1/2cup ketchup, 1/4cup brown sugar-mix together...add more
or less to your families liking
Very good with mashed potatoes or rice

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add potatoes, and cook until tender but still firm, about 15 minutes; drain, and return to pan.
While potatoes are boiling, heat oil in a large skillet. Cook ground beef with onion, red pepper, and garlic until beef is evenly brown. Stir in beef broth, ketchup, soy sauce, Worcestershire sauce, and curry powder. Bring to a boil, and simmer 3 to 4 minutes. Mix cornstarch with a little water to form a paste, then stir into skillet with tomatoes, peas and carrots. Cook until thickened; season with salt and pepper. Spoon into a casserole dish.
Preheat oven on broiler setting. Add milk and butter to cooked potatoes, and whip until smooth and creamy. Spoon over meat mixture. Sprinkle top with shredded cheese.
Place under broiler for 3 to 5 minutes, or until cheese is melted and speckled with brown.
How I MAKE IT...however, I must say that I modify EVERY recipe!
cook meat w/ onion and garlic (add more garlic!)
I use fresh tomatoes if I have them on hand...if not, I add a little extra ketchup. I use organic ketchup so it doesn't have much sugar...you could also add a little bit of tomato paste.
I use corn (frozen or canned) instead of peas and carrots.
I just make my mashed potatoes however I want to...usually buttermilk instead of milk and I use more butter.
Last time I made this, I made 3 batches of the meat mixture including the corn, and froze two. They were great!

Baked Bean Casserole
1 can buttermilk biscuits, each cut in half
1 lb ground beef
1 can pork and beans
3/4 cup regular barbecue sauce
1 1/2 cups grated cheddar cheese
2 tbsps brown sugar
onion powder or chopped onion to taste
Preheat oven to 350 degrees. Brown ground beef and drain. Add in barbecue sauce and brown sugar and onion or onion powder and pork and beans. Mix over medium heat. Pour mixture into a round casserole dish. Top with biscuits arranged in a circle around the edge and into the center laid on their sides (fan like). Top with grated cheese and bake for thirty min at 350 or until a little brown on top.

Super Hot Dish
1.5 lbs ground beef
1 package Lipton's dry onion soup mix
1 can cr. of mushroom soup
1 can cr. of celery soup
1 package (10 oz) frozen mixed vegetables
1 can water chestnuts (small)
1 pkg tater tots (small)
Saute ground beef in butter
Add onion soup mix.
Add other ingredients and mix well.
Place in large casserole.
Place frozen tater tots closely together on top.
Bake at 350 degrees for one hour.

Chow Mein Hot Dish
1 lb ground beef
1 chopped onion
1 cup celery chopped
1/2 cup uncooked rice
2 cups water
1 can mushroom soup
1 can chicken rice soup
4 T. soy sauce
2 T. Worcestershire sauce
Chow mein noodles
Brown onion and hamburger together.
Mix in remaining ingredients.
Bake in greased casserole, covered, 1 hour and 15 minutes at 350 degrees.
Remove from oven and sprinkle several handfuls of chow mein noodles over the top. Return to oven for 15 minutes more.

Taco Casserole
1 package cresent rolls (8)
2 lbs hamburger
1 package taco seasoning
1 8 oz. sour cream
1 egg
1 lb. Monterey Jack cheese (grated)
Roll crescent rolls out into bottom of greased 9x13 pan.
Brown meat and add taco seasoning.
Simmer 20 minutes.
Spread over rolls.
Mix sour cream & egg.
Pour over the meat.
Add the grated cheese.
Bake 350 degrees for 25 minutes.
Served with chopped tomatoes, lettuce, onions, g uacamole, olives, taco sauce.

Taco Casserole
1lbs Ground Beef
1 10 oz Can Red Enchilada sauce
1 14-16 oz Can Refried Beans
One bag of Tortilla Chips
Taco toppings of your choice (Cheese, green onion, lettuce, tomato)
Crumble and brown beef, Drain and return to pan add enchilada sauce and refried beans. Cook until well mixed and hot.
Crumble tortilla chips and place across the bottom of a casserole dish. Pour beef mixture over the chips, top with your toppings.
VERY simple meal. It takes less than 15 minutes to make, and it's VERY yummy! My very picky 4 year old loves it :) You can make it spicier by buying spicier enchilada sauce! I'm not 100% sure on what size can of Refried beans I use...it's just the average size can!

Cabbage and Ground Beef Casserole by Betty
Brown one pound of ground beef ( I added a little onion for extra flavor). Cut up a head of cabbage and steam in some water until wilted. Grease a large casserole dish. Put drained cabbage on the bottom of the dish. Top that with the browned ground beef. Make a white sauce by melting 3 tablespoons of butter or margarine, then adding 3 tablespoons of flour with 1 teaspoon of salt and a pinch of pepper. Stir the butter and flour together to blend. Slowly add 1 1/2 cups of milk into the flour mixture stirring constantly (a wisk works well for this). Once the white sauce comes to a boil, add 1 teaspoon of parsley flakes. Pour this white sauce over the cabbage and beef. Top with 1/2 cup bread crumbs tossed in 2 teaspoons of butter or margarine. Bake for 30 minutes in a 350 degree oven.

Easy Beef and Pasta Supper
1 lb. ground beef, browned (from freezer)
1 onion, chopped and sauteed (from freezer)
1 28 oz. jar pasta sauce
1/2 tsp. salt
1/8 tsp. pepper
16 oz. Mueller's Ready Cut pasta (large elbows)
1/2 cup shredded cheddar cheese
Cook pasta according to package directions. Drain. Combine first five ingredients over medium heat and heat until simmering. Add cooked, drained pasta and stir. Sprinkle with cheese before serving.

Crockpot Beef Casserole
2 lbs. stew beef cut into 1 inch pieces
1 envelope onion soup mix
1 (10 1/2 oz.) can cream golden mushroom soup (substitutions)
1 (4 oz.) can whole mushrooms
1/2 cup red wine
Combine all ingredients in crock pot. Stir together well. Cover (don't peek!) and cook on low for 8-10 hours (or on high for 5-6 hours). Serve over egg noodles.
*I used water instead of wine. Also, my mom suggested that you could add sour cream at the end of the cooking time and that would make stroganoff.*

1- 8oz tomato sauce
1- 4½ oz can sliced ripe olives
1 ½ C sharp Cheddar cheese
6 tortilla’s spread with butter
1 C. water
Brown beef and onion. Add seasonings and tomato sauce.
In casserole alternate layers of tortilla, meat sauce, olives and cheese.
Pour water into bottom of the casserole.
Cover tightly, bake @ 400 for 20 minutes.
Cut into 4 pie shape wedges

Modified from the bisquick box:
1 lb ground beef browned (I brown it w/ chopped onions and green pepper)
1/2 t salt (add after beef browned)
-spread beef in greased 9 in pie plate
1 can sliced mushrooms (optional) -spread over beef
1+ C shredded cheese -sprinkle over beef
Mix together:
1/2 C baking mix
1 C milk
2 eggs
Pour mixture over beef and cheese
Bake 25 minutes at 400 degrees

modified from Kraft food and family magazine
1 lb taco meat (I usually use ground beef browned w/ taco seasoning and water per pkg directions, I also brown w/ chopped onions and green pepper)
6 flour tortillas
1 can refried beans
1+ C shredded cheese
In a greased 9 in pie plate: Layer 2 tortillas, 1/2 of the meat, 1/2 of the refried beans, and 1/2 of the cheese. Then repeat (tortillas, meat, beans, cheese). Top w/ 2 tortillas.
Bake at 350 for 30 minutes
I serve w/ sour cream, may also serve w/ salsa, black olives etc...
SOme times I leave out the meat and make it vegetarian, just add the taco seasoning to the beans and heat a bit

No Peek Hot Beef Sandwiches
4-5 pounds beef roast
1 pkg dry onion soup mix
1 can chicken gumbo soup
1 10.5 oz can water
good buns
Place fresh roast in a roaster. Pour soup over meat and add water around the edge of the meat. Sprinkle dry onion soup over the soup on the meat. Cover the roaster. Bake fiver hours at 275 degrees. Use two forks to pull apart and shred the beef. Serve on fresh rolls.

Dorito Casserole adapted from a recipe I found on the internet
Casserole Ingredients
~1 large 13 ounce package of Doritos (save 2 cups for topping) Another note - I use Aldi brand Nacho flavor chips not name brand Doritos.
~1 10 ounce can of chili with beans
~1 lb cooked ground beef
~1 8 ounce can tomato sauce
~1 1/2 cups of shredded cheddar cheese
Topping Ingredients
~2 cups Doritos
~1/2 cup of Shredded Cheddar Cheese
~1 1/4 cups sour cream
Directions
Preheat Oven to 375 Degrees.
~Crumble 6 cups of Doritos (just crush them in the bag)
~Add the cooked ground beef, chili, tomato sauce and 1 1/2 cups of cheddar cheese to the crumbled Doritos. Stir with a spoon to combine. Place mixture in a 9 x 13 oven proof casserole dish.
~Bake 20 minutes.
~Remove from oven. Spread the sour cream over the top. Top with 2 cups of Doritos. Sprinkle with 1/2 cup cheese. Bake another 5 minutes & Serve.

Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops.

Swedish Meatballs
1 1/2 lbs hamburger (or 1 lb beef and 1/2 lb ground pork)
3 pieces of fresh bread
1 cub milk
1 egg
2 T dry onion
1 1/4 tsp salt
1/4 tsp pepper
1/4 tsp sage
1/4 tsp ground mustard
1/4 tsp celery salt
1 T worchestershire sauce
1/4 tsp garlic salt
combine all ingredients. Make into meatballs. Bake on a cookie sheet at 350 degrees for 25 - 30 minutes.
sauce:
1 cup ketchup
1/2 cup brown sugar
1/4 cup vinegar
combine. Pour over meatballs. Bake for an additional half hour or put in crockpot for at least an hour.
*** Variation *** cover with cream of mushroom soup instead of the sweet and sour sauce.

Brown 1 pound of ground beef, draining fat.
Slice 3 potatoes, 1 onion, and two carrots thin.
You will need a can of peas or some frozen peas.
Make a white sauce or use a can of cream of chicken soup (I made a white sauce and put some chicken boullion in it with some italian seasoning)
Take a large casserole and layer until all the ingredients are used in this order:
ground beef, potatoes, onions, carrots, peas.
Pour soup or white sauce over that.
Bake for 1 or 1 1/2 hours at 375 (I covered the casserole with its lid)

variations on meatloaf
start with your usual meatloaf recepie
fill bread pan one third full with meat then add a layer of one of the following
feta cheese crumbled (do you have feta?) mixed with chopped herbs, mint or parsley or just leave out the herbs if cash is tight.
macaroni mixed with cheese sauce(use a leftover)
steamed broccoli mixed with grated cheese(use your favourite)
chopped bacon and sundried or blush tomatoes
cover filling with rest of meatloaf mix and bake as usual

This is my brother's MIL's recipe for "No Peek Beef"
Stick the roast in a roaster pan. Pour a can of Campbells chicken gumbo soup over it (I can only get this in the big city). Pour a can of water around the roast. Sprinkle a packet of onion soup mix on top of the soup on the roast. Cover and bake at 275 for five hours WITHOUT PEEKING. Then take it out and shred with two forks. I used a sirloin tip roast and it shredded wonderfully. The meat soaks up all that liquid. I use about a 4-5# roast. Serve on fresh rolls.

Tuscan Meatballs
Makes: 6 servings
Prep: 15 min Cook: 7 min
Bake: at 350 for 20 minutes
1 pkg - 10 oz frozen chopped spinach, thawed (I've also used steamed, finely chopped, fresh broccoli or fresh spinach)
1 lb ground turkey (I used ground beef)
1 egg (I used 2)
1 c seasoned bread crumbs
1 c grated Parmesan cheese
2 handfuls shredded mozzarella cheese - 1/2 to 3/4 cup (I used smoked sharp cheddar)
1 tsp garlic salt
black pepper to taste
1 to 2 Tbsp olive oil
12 oz spaghetti (I made mashed potatoes instead because I was out of pasta, and we just used the sauce over the potatoes and meatballs)
1/2 to 3/4 c whit wine or chicken broth
3 Tbsp butter
1 to 2 cloves garlic, chopped
Parmesan cheese, to serve
1. Heat oven to 350. Squeeze water out of spinach. Mix spinach, turkey, egg, bread crumbs, Parmesan, mozzarella, garlic salt and pepper in a bowl. Shape mixture into meatballs -about 30. (I made about 20.)
2. Heat oil in a large frying pan over medium-high heat. Brown meatballs about 2 to 3 minutes. Once browned, move pan directly to oven to finish cooking meatballs, about 20 minutes. (I used my cast iron skillet, and it took about 18 minutes until they were done. I did mine in 2 different skillets so that they had room.)
3. Once meatballs are baking, bring a large pot of lightly salted water to boiling. Cook the spaghetti until al dente, following package directions.
4. When meatlballs are done, transfer to a plate to keep warm. Deglaze pan with wine or broth. Add butter and garlic; let thicken slightly. Once pasta is done, drain, reserving 1 cup pasta water. Add pasta to sauce in pan plus some pasta water as needed. Toss pasta to coat, then add meatballs back to pan. Sprinkle with Parmesan cheese and serve.
These measurements are "guesstimated". I basically add the ingredients to taste and by sight rather than strict measurements.
1lb ground beef
16oz angel hair pasta (or your favorite pasta, we use rotini noodles)
1 jar spaghetti sauce (or 2 cans tomato sauce, but I prefer sp. sauce)
8oz cream cheese
8oz sour cream
2 cups shredded cheese (I prefer colby/jack)
Seasonings to taste (garlic, onion, etc.)
Prepare pasta (boiling til ALMOST tender & ready, but not quite)
Brown ground beef and add your choice of seasonings (I use TS's pesto & garlic)
Mix cream cheese & sour cream together til smooth.
In a baking pan, first place cooked & drained noodles.
Then pour sauce over noodles.
Evenly layer cream cheese/sour cream mixture over noodles & sauce.
Next, layer browned ground beef on top of cream cheese/sour cream mixture.
Then cover evenly with shredded cheese.
Cover & bake at 350 for 45 minutes to an hour.

Ingredients
Gingered Beef and Leeks
1 pound flank steak, sliced on the bias against the grain, 1/4-inch thick
1 tablespoon minced garlic
2 tablespoons naturally brewed soy sauce
1 teaspoon sesame oil
3 large leeks, white part only, julienned
1 red jalapeno, stemmed, minced, seeds and all
1/4 cup ginger syrup (recipe follows)
Kosher salt and freshly ground black pepper
Steamed white rice to serve
Directions
In a large bowl, marinate the flank steak, garlic, naturally brewed soy sauce and sesame oil. In a wok or saute pan coated lightly with oil on medium-high heat, add meat, season and brown well, about 3-4 minutes. Remove and add 1 tablespoon of oil and still on high heat, add the leeks and jalapenos, season. Add back the beef with the ginger syrup. Check again for flavor. Serve family style with white rice. Ginger Syrup
2cups sugar 2 cups fresh ginger, cut into 1/8-inch slices (about 2 large hands)
2 cups water
Directions
In a medium saucepan over high heat, combine sugar, ginger and water and bring to a boil. Reduce heat and simmer until syrupy and reduced by half. Syrup should hold a line of a plate. Strain ginger pieces out and reserve syrup.
(Trick: toss dried ginger in sugar, bake at 200 degrees until dried thru, about 4 hours and voila-ginger candy)

Hamburger Macaroni Skillet
1 1/2 pounds ground beef
2 cans tomato soup, undiluted
2 cups uncooked elbow macaroni
2 cups frozen mixed vegetables
1 3/4 cups water
2 tsp garlic powder
1 tsp dried basil
1/2 tsp dried oregano
Cook ground beef over medium heat til no longer pink; drain. Stir in all the other stuff. Bring to a boil. Reduce heat; simmer, uncovered for 20 minutes or until macaroni is tender.
(hmm... I guess this wasn't a 9x13 recipe... wonder what I was thinking... :dunno: I've made it twice... we sprinkle cheese on it... we sprinkle cheese on everything)

Ingredients:
9 Lasagna noodles
2 cans of pasta sauce (I used 1 Primo & 1 Ragu)
2 C Ricotta Cheese
1 Bag of shredded mozzarella (about a pound I think)
3 lbs ground beef, browned
1 small sweet onion sauteed with beef
Season the ground beef with Italian seasoning or oregano & garlic& salt
1.Spread pasta sauce on the bottom of a 9X13 pan and put the first layer of noodles.
2. Put more sauce on top of the noodles then top with ground beef/onion mixture.
3. Lightly cover with mozz. cheese
4. Put a layer of noodles, then sauce, then ground beef.
5. Stir the ricotta cheese and put it in dollops over the beef, use a spatula to spread it out and it's okay if the ricotta and ground beef mix a bit!
6. Last layer of noodles, top with sauce, ground beef and the rest of the Mozz. cheese
I put a sheet of foil over it and let it sit for the 30 minutes until I was ready to cook it before eating. Since it was all still warm it took less than 30 minutes to finish baking!
From cold it would probably take an hour to heat back up. Take the foil off for the last ten minutes or so.

I got this recipe from all-recipes.com. When I made it I put about 1.5 pounds of baby carrots in the pan with the corned beef. I took them out of the pan just before I drained the juices. I used the juice from the corned beef to boil the potatoes. I mashed mine, but they'd be good just boiled, too.
Glazed Corned Beef
Ingredients
4 1/2 pounds corned beef, rinsed
1 cup water
1 cup apricot preserves
1/4 cup brown sugar
2 tablespoons soy sauce
Directions
1.Preheat oven to 350 degrees F (175 degrees C).
2.Coat a large pan with non-stick cooking spray. Place corned beef in dish and add water. Cover tightly with aluminum foil and bake for 2 hours; drain liquid.
3.In a small bowl combine apricot preserves, brown sugar, and soy sauce. Spread the apricot mixture evenly over the corned beef.
4.Bake uncovered at 350 degrees F (175 degrees C) 25 to 30 more minutes, or until the meat is tender; basting occasionally with pan drippings.
5.Slice corned beef across grain and serve.

Linda's Shepherd's Pie
I developed this recipe myself, which is why I put my own name in the recipe title. :giggle:
Ingredients:
3 cups leftover meat, such as lamb, pork loin or roast beef, cubed
1 tbsp vegetable oil, canola oil, or extra light olive oil
2 cups carrots, coarsely chopped (I use my PC Food Chopper)
1 cup diced onion
1 4-oz can mushrooms, including liquid
About 1½ cups gravy or one 10¼-oz can golden mushroom soup
1½ tsp worcestershire sauce
3 roma tomatoes, chopped or 1 15-oz can diced tomatoes, drained
Mashed potatoes (I like to use Yukon Gold potatoes)
Salt and pepper to taste
Directions:
Preheat oven to 350°. Add the oil to a large pan and heat. Add carrots and onions; cook over medium heat until onions and carrots begin to soften. Stir in the cubed meat; cover. Cook until vegetables are tender. Add mushrooms with liquid, the tomatoes, the gravy or soup and the worcestershire sauce; cook until heated through. Add salt and pepper. Pour meat mixture into 2½-quart casserole dish sprayed with nonstick spray. Spoon prepared mashed tomatoes on top. Bake 30 minutes, or until the pie is bubbly and the potatoes are light brown on top.
This will serve between 6-8 people, depending on their appetites.
Note: If your meat is already well seasoned (as with roast lamb), you may not need to add additional spices. If not, rosemary, thyme or tarragon adds some nice flavor to this dish.

1 tbls. olive oil (I used veg)
1 onion, finely chopped
3 garlic cloves, minced
1/3 cup milk
1/4 cup horseradish (I had to leave this out because I had none)
3 tbls. chilli sauce (I used ketchup)
2 eggs
1/2 tsp salt
1/8 tsp white pepper
1 tsp dried marjoram leaves (I had none so I used Basil)
1/4 cup minced fresh parsley (I used dried)
1 cup soft fresh whole wheat bread crumbs
2-2 1/2 pounds ground turkey
Cook onion and garlic in a pan with the oil until tender. Transfer to a mixing bowl and mix with the remaining ingredients except for turkey. When mixed, add turkey last and mix gently, just until combined.
It calls for putting overlapping strips of foil on the bottom of the crock and overlapping them over the edges of the pot to make lifting the meatloaf out easier, but I used a crockpot liner I had on hand. You don't have to do this step if you don't want to.
Cook on low for 7-8 hours or until meat thermometer registers 170 degrees. After removing from the crock, cover and let rest 20 minutes before slicing.
Serves 8.

Take 1 to 2 pounds of stew meat and place in a roaster or large casserole.
Add 2 onions, chopped.
Add some mushrooms if desired (I left this out)
Add 2 envelopes of dried onion soup mix
Add 1 can of beef broth
Add 1 can of cream of celery soup
You do not have to mix this or even brown the beef first. Just bake at 350 for 2 hours with the lid OFF.
I will let you know how it turns out. Serve over rice or noodles (or mashed potatoes even).

Crock Pot Stuffed Cabbage
1 small to medium head of cabbage, shredded is placed in the bottom of a crock pot. Place 1 pound of ground beef atop that (raw). Season with salt and pepper and garlic powder if you have it. Place some chopped onion on top of that. Then put 1/2 cup of raw rice on top of that. Cover with a 16 oz can of crushed tomatoes mixed with 8 ounces of tomato sauce mixed with some grape jelly, brown sugar, and lemon juice to taste. Cook on low for 8-10 hours.

This is the official recipe as I was given it:
Sloppy Joes
Brown 1 diced onion in 2 Tbsp butter.
Add 1-2 pounds of hamburger and brown.
Stir in:
2 Tbsp brown sugar
1/4 cup lemon juice or vinegar
1 tsp dry mustard
1 12-ounce bottle of ketchup
3 Tbsp worchestershire sauce
Simmer to develop the flavor.

CREAMY BAKED SPAGHETTI CASSEROLE
8-12 ounces spaghetti (or other pasta)
8 ounces sour cream
8 ounces cream cheese (cut up)
1 lb ground beef, cooked and drained (crumbly)
30 ounces spaghetti sauce
2 cups mozzarella cheese
salt and pepper to taste (or anything else as you see fit)
Grease 9 x 13 pan.
Cook the spaghetti and drain, but don't rinse. Put it right back in the warm pot and add the cream cheese. Blend the cream cheese until melted with the spaghetti and then blend in the sour cream. Put spaghetti mixture into greased pan. Layer some of the mozzarella, then the beef, then a little more mozzarella.
Spread the spaghetti sauce across and then put the rest of the mozzarella on top. Bake at 350 for 30-35 minutes or until a knife comes out clean. Let it stand for 5 or 10 minutes. Great with garlic bread and a salad!
