Please include recipes for meals that can be made in a single skillet on the stovetop.

Pork Chop-Scalloped Potato skillet meal
--------------------------------------------------------------------------------
4-1"-thick, bone-in pork chops, trimmed of fat
1 package scalloped potato mix (such as Betty Crocker)
1 tbs oil
salt
pepper
In large skillet, heat the oil. Meanwhile, sprinkle both sides of pork chops with salt and pepper. When oil is heated, place pork chops in skillet and brown on both sides, for approximately 15 minutes. Remove chops from skillet. Pour in the water and milk called for on the package of potatoes, but omit the margarine. Stir in the seasoning mix and potatoes. Bring to a boil; reduce heat. Place browned pork chops on top of the potatoes. Cover and simmer for 20-25 minutes, or until chops are completely cooked through and potatoes are tender. Serves 4.

Basic chicken and rice skillet...

Okay, when I first started cooking, I just used Minute Rice and the instructions on the back of the box. Very easy - very good, I highly recommend it! Now though, I can't afford and am making an effort not to use any convenience foods, so we don't do Minute rice or canned soups. So, here's my version:
4 chicken breasts (or the equivalent - today I used the meat off 3 chicken leg quarters...maybe 2-3 cups?)
2-3 cups rice (I use regular white rice - if you use brown rice remember it takes more liquid and more time...learned that the hard way!)
1 cup water
1-2 cups chicken broth
1 can cream of chicken soup(or the equivalent if you make your own)
Paprika, garlic powder, onion powder, salt and pepper to taste
Additions: chopped broccoli, mixed veges, etc.
I put in the water and chicken broth first and heated until boiling. Then I added the rice, chicken and broccoli. Stir, Then sprinkled on spices. Reduced heat, covered, and cooked about 20 minutes until rice was done.

Scalloped Potatoes and Ham Skillet

From Pillsbury One Dish Meals Cookbook
2 cups cubed cooked ham
1# small new red potatoes, thinly sliced (about 1 1/2 cups)
1 cup thinly sliced celery
1 cup thinly sliced carrots
1/2 cup chopped onion
1/3 cup water
3 cups milk
1/4 cup flour
1/8 tsp pepper
Spray large skillet with nonstick cooking spray. Heat over medium heat until hot. Add ham, potatoes, celery, carrot, onion and water. Cook until bubbly. Reduce heat to medium-low; cover and cook 5 to 8 minutes or until vegetables are tender, stirring once.
Meanwhile, in a medium bowl, combine milk, flour and pepper; blend well. Add to skillet; cook and stir over medium heat until bubbly and thickened.

Spicy Ham and Cheese Pasta

From Pillsbury One Dish Meals Cookbook
1 (10 oz) package frozen cut broccoli with cheese flavored sauce in a pouch
7 oz (about 2 cups) uncooked medium shell pasta
1 tsp oil
1/4 tsp crushed red pepper flakes
1 medium red bell pepper, chopped
6 oz. cooked ham, cut into thin strips (1 cup)
Bring large saucepan of water to a boil. Add unopened pouch of broccoli with cheese flavored sauce; cook 5 minutes. Add pasta to water; return to a boil. Cook an add'l 10 to 11 minutes or until pasta is tender. Drain.
Meanwhile, heat oil and rep pepper flakers in a skillet over medium high heat until hot. Add bell pepper and ham; cook and stir 3 to 4 minutes or until bell pepper is crisp tender.
Return cooked pasta to large saucepan. Open broccoli pouch; add to pasta. Add ham mixture; toss gently to mix.

I use a stockpot or heavy saucepan.
brown a pound of ground beef, drain fat
coat cooked meat w/ taco seasoning
add one c. water, bring to boil and dissolve beef bouillion cube
add one or two cans of tomato soup
one can kidney beans
one can black beans/red beans or other variety you like
one can corn or hominy (all canned beans/veggies rinsed)
one can sliced, drained olives
one can diced mexican seasoned tomatoes w/ juices
Add enough water to get desired consistency
Serve with tortilla chips, guacamole, sour cream and shredded cheddar or monterey jack cheese as additional toppings for a really gourmet feast.

Hamburger Skillet Stew
Source: Culinary Book
1/4 lb Lean ground beef
1 lg Onion, sliced wafer-thin
4 Carrots, sliced wafer-thin
2 Potatoes, halved, sliced wafer thin
3 Ribs celery, sliced wafer thin
1 c Boiling water
2 t Beef extract or bouillon
2 Bay leaves
1/4 t Dried thyme
Salt or garlic salt
Pepper
1/4 c Dry red wine or tomato juice
2 T All purpose flour
Use melon baller and shape meat into tiny meatballs. Brown in skillet. Discard any fat. Stir onion into
skillet and cook 1 min. Add boiling water or broth and extract or bouillon. Add remaining veggies, seasonings. Cover, cook over low heat, 15 minutes until veggies are tender. Combine wine or water and flour in covered jar. Shake and stir into skillet. Cook and stir until sauce is thick, 4 minutes.

skillet chili

1 1/2 pounds lean ground beef
1 onion, finely diced
1/4 cup chopped green bell pepper
1 (15 ounce) can tomato sauce
6 ounces tomato paste
1 (16 ounce) can chili beans, drained
1 tablespoon chili powder
1 teaspoon hot pepper sauce
1/2 teaspoon seasoning salt
1/2 teaspoon ground cayenne pepper
1/4 teaspoon garlic powder
Place ground beef in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain excess fat, and crumble. Stir in onion, green pepper, tomato sauce, tomato paste and chili beans. Season with chili powder, hot sauce, seasoning salt, cayenne pepper and garlic powder. Simmer over low heat, stirring occasionally, until desired consistency (1 1/2 to 2 hours).

4 boneless chicken breast halves
1 can chicken broth with roasted garlic (you can also use regular chicken broth and add fresh garlic as desired)
3/4 cup uncooked regular long-grain white rice
1 bag (16 oz.) frozen vegetable combination (broccoli, cauliflower, carrots)
1/3 cup grated Parmesan cheese
Paprika
Spray skillet with vegetable cooking spray and heat 1 min. Add chicken and cook until browned. Remove chicken. Add broth, rice and vegetables. Heat to a boil. Cover and cook over low heat 15 min. Stir in cheese. Top with chicken. Sprinkle with paprika. Cover and cook 10 min. or until done.
Makes 4 servings

This uses breakfast ingredients but we eat it for dinner, quick and easy.
1 Tbsp. butter
3 cups shredded hashbrowns.
4 eggs, beaten.
1/2 Polish Kielbasa, sliced and diced.
1/2 green bell pepper, diced.
Melt butter in skillet. Add hash browns and cook until almost done, add diced sausage, bell pepper. Heat through, then scrape hashbrown/sausage mixture to side of skillet. Add beaten eggs, scramble the eggs as the cook. Then kind of stir the eggs through the hash brown mixture. Add pepper and salt to taste.
We serve this with fresh fruit or whole wheat toast. I've done this recipe with left over diced ham or sausage like Jimmy Dean that comes in the tube. I just cook the sausage first and then add hash browns, etc.

1 lb gr beef
2 c water
1 c salsa (homemade or canned)
1 pkg Kraft deluxe mac and cheese dinner
2 c frozen corn
1/2 c shredded Mexican cheese
1 green onion chopped (optional)
Brown meat in skillet and drain, return to skiller
Stir in water, salsa and macaroni
Bring to boil. Reduce heat to low and cover.
Simmer 10 min stirring occasionally
Add corn and cheese sauce mix and cook 2 min
Serve with shredded cheese and onion sprinkled on top.
