Here's where we can post dessert recipes that don't fall into the other established categories (cakes & pies, cookies & bars, Christmas goodies, fudge).

oatmeal whoopie pies

cookies:
2 cups brown sugar.
3/4 cup butter or margarine.
2 eggs.
2 1/4 cups flour.
1/2 teaspoon salt.
1 teaspoon baking powder.
1 teaspoon cinnamon.
2 cups uncooked oats.
2 teaspoons baking soda.
3 tablespoons boiling water.

cream brown sugar, butter and eggs. add dry ingredients except baking soda. mix
well. dissolve baking soda in boiling water and add to batter. mix well. drop by
large spoonsful onto greased cookie sheet. baking at 350 degrees for 10-15
minutes.

filling recipe
1 (8 ounce) package cream cheese, softened
1/4 cup butter
1 teaspoon vanilla extract
1 cup confectioners' sugar

blend together and enjoy!

EASY - Peanut Butter Cream Parfaits

8 oz cool whip, thawed
1/2 cup peanut butter
18 milk chocolate kisses

In a bowl, stir half of the whipped topping into peanut butter. Stir in the remaining topping until blended. Set aside two chocolate kisses; coarsely chop the remaining kisses.

Divide a third of the cool whip mixture between two parfait glasses; top each with a fourth of the chopped kisses. Repeat layers. Top with remaining cool whip mixture and reserved kisses. Chill until serving.

*I actually thought this was easily a four-serving dessert. I guess it depends on how hungry you are.

Chocolate Caramel Apples

Source: Better Homes and Gardens

Ingriedents:

18 small apples
18 wooden sticks
1/2 cup butter
2 squares (2 ounces) unsweetened chocolate
2 cups packed brown sugar
1 cup light-colored corn syrup
1 14-ounce can (1-1/4 cups) sweetened condensed milk
1 teaspoon vanilla
1 cup chopped peanuts


Directions:

1. Wash and dry apples. Remove stems. Insert one wooden stick into the stem end of each apple. Set apples aside.

2. Melt butter and unsweetened chocolate in a heavy 3-quart saucepan over low heat. Add brown sugar, corn syrup, and sweetened condensed milk; mix well.

3. Clip a candy thermometer onto side of pan. Cook over medium heat, stirring frequently, until thermometer registers 245 degrees (firm-ball stage). Remove saucepan from heat. Stir in vanilla.

4. Dip each apple into the hot caramel mixture, and use a spoon to spread the mixture evenly over apple. Allow excess caramel mixture to drip off. Immediately dip bottoms of apples into peanuts. Place apples, peanut side down, on waxed paper and let stand about 25 minutes or until firm. Makes 18.

whoopie pies



cookies:

2 cups sugar.
2 eggs.
2 teaspoons vanilla.
1 cup cooking oil.
1 cup sour milk.
4 cups flour.
2 teaspoons baking soda.
1/2 teaspoon salt.
1 cup cocoa.
1 teaspoon instant coffee powder.
1 cup hot water.

cream together sugar and eggs. add vanilla, cooking oil and sour milk and mix. combine flour, baking soda, salt and cocoa. dissolve instant coffee in hot water. let cool. add dry ingredients to creamed ingredients, alternating with coffee water. drop by rounded teaspoonsful onto greased cookie sheet. bake at 400 degrees for 8 to 10 minutes.

Filling:
pasteurized equivalent of 2 egg whites.
2 teaspoons vanilla.
3 1/2 cups powdered sugar.
4 tablespoons flour.
2 tablespoons milk.
1 1/2 cups shortening (crisco).

beat egg whites until soft peaks form. add vanilla and beat longer. add remaining ingredients and beat until smooth and spreadable.



use 2 of the cookies and make a sandwich cookie with the filling in the middle.

enjoy!!!

LOWCAL OPTION: the filling can also be made with powdered sugar, vanilla and that marshmallow fluff stuff. not as good and not as nice a consistency but a whole lot less fat calories. you mix a jar of it with about 2 teaspoons of vanilla and enough powdered sugar to give it a spreadable consistency.

WW Strawberry Desert

4 cups fresh strawberries, sliced
1 sm box sugarfree instant vanilla pudding
2 cups cold water
1 small box sugarfree strawberry jello

Fill 9" pie pan or bowl with sliced strawberries. Prepare pudding with the 2 cups of
cold water instead of milk. Stir in dry jello until dissolved. Pour over berries. Chill 'til
set. Top with whipped topping.

Serves 4 -- ea. 1 point (topping points are extra)

Fresh Fruit Cobbler Slices (Blueberry)

This is like pie, only bigger & better! Compliments of my sister's mil, a very nice
german lady.

For the crust:
3 c. flour
3/4 t. baking powder
1 t. salt
2 T. sugar
8 T. milk or water (I use milk)
3/4 c. shortening
1/2 c. butter or margarine
Corn Flake crumbs

Cut shortening & butter into dry ingredients. Stir in liquid, mixing gently with a fork
or pastry mixer. May roll out better when chilled (I've done it both ways & prefer
chilled). Divide dough. Roll out on lightly floured board to fit your pan. Sprinkle a light
layer of corn flake crumbs over crust.

For Blueberry filling (may also be made with fresh pitted cherries):

8 c. blueberries (fresh or frozen)
1/4 c. corn starch
1/2 c. flour
3 c. sugar

In a large pan mix ingredients together & bring to a light boil (you may need to add
a small amount of water), until thickened.

Lightly pour blueberry mixture over prepared crust (making sure blueberries have
cooled some). Roll out remaining dough for top layer. Place over blueberries & cut
slits for allowing steam to escape.

Bake at 425 degrees about 30 minutes. When cooled, or slightly cooled, you may
drizzle a very thin layer of buttercream icing across top in a criss-cross pattern.
DELICIOUS!

I make this in a jelly roll pan which is quite large (not sure of dimensions). I've also
divided it & prepared it in smaller pans.

Very Easy Baked Apple Dumplings


2 tablespoons sugar

4 apples (peeled, cored and sliced thin)

12 uncooked canned cresent rolls

1 cup light brown sugar

1 teaspoon cinnamon

1 stick of butter

2 cups apple juice

Sprinkle sugar over sliced apples. Seperate the cresent rolls and put an apple slice on each roll then dough up around the apples.

Place the dumplings in casserole dish.

Mix brown sugar, cinnamon, butter and apple juice in saucepan and bring to a boil, while stirring. Pour mixture over dumplings and bake at 350 degrees for 30 minutes. Sprinke the top with powdered sugar and serve warm.

Caramel Apple Dip

Warning: this stuff is addictive LOL

3/4 c. brown sugar

1/2 cu. sugar

8 oz. cream cheese

2 tsp. vanilla extract

Mix together and dip apples into it. YUM!

If you like Wendy's chocolate ice cream... here it is...

1 can Eagle brand milk (condensed)
1 ctn. Cool Whip
Chocolate milk.

Combine eagle brand milk, cool whip, and some milk... pour into ice cream freezer and finish filling with chocolate milk.

Oh it is to die for!!!!!

Homemade Ice Cream


For Vanilla:

Beat 2 eggs with 1 cup sugarm 1 teaspoon vanilla, and a dash of salt. Add 1 can sweetened condensed milk and 1 8-oz container of cool whip (or generic brand). Mix well. Pour into container, add the paddle, then pour in enough half & half or milk to fill the container (I use whole milk). Freeze.

For Strawberry Banana:

Mash 1 quart strawberries with fork, add 1/2 cup sugar. Mash 1 or 2 bananas with 1 teaspoon lemon juice. Combine. Let sit.
Beat 2 eggs with 1/2 cup sugar, 1 teaspoon vanilla, and a dash of salt. Add 1 can sweetened condensed milk, 1 8-oz carton cool whip, and 1/2 - 1 cup chopped pecans (optional). Mix well. Pour into container, add the paddle, then pour in enough half & half or milk to fill the container (I use whole milk). Freeze. This takes longer to freeze than the vanilla.

For Snickers Ice Cream:

Make the vanilla recipe. After putting it into the container, add 10 fun size snicker bars that have been frozen and chopped. Fill with milk and freeze. After done, or during freezing, take time to stir so that the snickers are throughout the ice cream. MY FAVORITE and what I made for Sunday.

Banana Split Dessert


1 8 oz cream cheese
3/4 cup sugar
1 16 oz can crushed pineapple (drained)
1 16 oz frozen strawberries
3 medimum bananas (sliced)
1 8 oz cool whip
1/2 cup chopped nuts

Cream cream cheese and sugar with mixer. Add pinapple, strawberries, bananas, and cool whip mix with spoon. Spread mixture into a 9X13 pan. Top with nuts (optional) Freeze overnite.

Here's my favorite brownie recipe. It's delicious with or without frosting. I've included 2 of my favorite frosting recipes.

Chocolate Brownies
Makes 16.

2 eggs

1 cup granulated sugar

1/2 tsp. vanilla

1/2 cup margarine or butter, softened

1/2 cup unsifted all-purpose flour

1/3 cup Cocoa

1/4 tsp. baking powder

1/4 tsp. salt

1/2 cup chopped nuts, optional (I use walnuts.)


Beat eggs in bowl. Gradually add sugar and vanilla. Blend in melted butter or margarine. In a separate bowl combine flour, cocoa, baking powder and salt. Gradually blend flour mixture into egg mixture until thoroughly blended. Stir in nuts. Spread in a greased, 8-inch square baking pan. Bake at 350 degrees for 30 to 35 minutes or until brownie begins to pull away from edges of pan. Cool in pan. Frost, if desired. Cut into squares.


COCOA MINT FROSTING
(Makes approx. 2-1/4 cups)

1/2 cup margarine or butter
1/2 cup cocoa
3-2/3 cups (1 lb. box) powdered sugar
1/3 cup milk
1/2 tsp. pure mint or peppermint extract

Melt margarine or butter over low heat in a small saucepan. Add cocoa. Heat, stirring constantly, until mixture just begins to boil. Remove from heat. Pour into small bowl. Alternately add powdered sugar and milk. Beat to spreading consistency. Blend in mint or peppermint extract. Spread frosting while still warm.


FUDGE FROSTING
(Makes approx. 1 cup)

3 TB margarine or butter
1/3 cup Cocoa
1/2 tsp. Vanilla
1-1/3 cups powdered sugar
2 to 3 TB milk

Melt butter or margarine in a small saucepan. Add cocoa. Coook over low heat, stirring constantly, until mixture begins to boil. Pour into a small bowl; cool completely. Stir in vanilla. Alternately add powdered sugar and milk; beat to spreading consistency.

Peach Crisp

2 Large cans of Peach pie filling
1 yellow cake mix
1 stick of butter
1 cup chopped pecans

Into 9x13 pan dump...

Peach pie filling.
Sprinkle the dry yellow cake mix over the fruit.
Slice butter into 1/4 inch slices and place all over the top of the cake mix.
Sprinkle pecans on top.

Bake at 350 for 45 minutes

Serve warm over vanilla ice cream.

Can also substitute cherry filling and white cake mix or pineapple filling with pineapple cake mix.

Rhubarb Dessert

It's not exactly bars, but it does hold together pretty well and is really really
yummy.

Here goes

3 c. cut up rhubarb
1/4 c. water
1 1/2 c. sugar
2 T. cornstarch
1 t. vanilla

Cook the above ingredients in pan until thickened and then pour over crust

Crust:
1 1/2 c. flour
1 c. brown sugar
1 c. shortening (I use butter or margarine)
1 t. baking soda
1 1/2 c. oatmeal

Mix together, until it's a crumbly consistency (a pastry blender works well) Press
most of it into the bottom of a 9 x 13 pan, reserve the rest for the top

Bake at 350 degrees for 30 min

best ever brownie mix

this is a bulk receipe!

Store the following in a large airtight container label with date and contents stored
in a cool, dry place, it will last 10-12 weeks. makes about 15 cusp Brownie mix.

6 cups all purpose flour
4 teaspoons baking powder
4 teaspoons salt
8 cups sugar
1 can unsweetened cocoa powder (8 oz) .... yep, the whole container.

Combine in a large bowl, using a wire whisk until evenly distributed. store in an air
tight container.

To Make Brownies:

1/4 cup butter/or margarine melted
2 eggs, beaten
1 tsp vanilla extract
2-1/4 cups of Brownie mix
1/2 cup nuts optional

grease 8" square pan. preheat oven to 350. combine melted butter, eggs, vanilla
and brownie mix. beat until smooth stir in nuts, pour into prepared pan. bake 30-35
minutes.

or Chewy chocolate cookies:

1/4 cub butter, melted
2 eggs, slightly beaten
1/4 cup water, more if needed
2-1/4 cup brownie mix above
1/2 tsp baking soda
3/4 cup flour
1 tsp vanilla extract
walnut or pecan halves

grease baking sheets, blend ingredients together. drop by teaspoonfuls 2" apart on
baking sheets. put a walnut or pecan half in center. make 10-12 minutes, makes
about 36 cookies. 375

Chocolate pudding tarts

lrg box of jello pudding mix- chocolate
8 oz. tub cool whip
keebler 6 pk of graham cracker crusts


make the pudding in the direction for pies
put in half the tub of cool whip or a little more if you'd like and fold into pudding
then put into the crusts and chill.

A NC mama's cobbler

This is what my mom does, and I just copy her's, but it always gets rave reviews. I
use blackberry's all the time, and this past Sunday I made one that was half
blackberries and half strawberries. Man, it was good!!

Okay here goes: In a 9x13 pan(glass or whatever), melt a stick of butter(two if you
want to live dangerously - I just use one) in the pan while you are preheating the
oven to 350.

When the butter is melted, dump in 2 cups of self-rising flour(make sure it's
self-rising, or add the baking powder and salt, otherwise you are going to have
blackberry pudding, not cobbler - just ask me how I know:-) 2 cups of sugar, 2 cups
of milk. Stir all that up pretty good, and then add two cups of the fruit.(don't stir the
fruit just try to drop it in kind of even all around the pan)

Bake until brown and firm. Wonderful with ice cream!!

I've made this dessert several times, and it always gets compliments. I am making it for our share dish meal at church tomorrow.

Strawberry Pretzel Jell-o

2 cups crushed pretzels
1 1/2 sticks melted butter
1/4 cup sugar

Mix and spread the above ingredients in a buttered 9X13 pan. Bake at 350° for 10 minutes. Cool.

8 oz softened cream cheese
2 cups Cool Whip
1 cup sugar

Mix the above 3 ingredients well and spread over crust. Let set in refrigerator.

20 oz frozen strawberries (I set these out on the counter when I start making the crust - it makes them a little easier to use.)
2 cups pineapple juice
6 oz strawberry jell-o package

Heat the pineapple juice. Dissolve the jell-o in the juice. Add berries. Stir til berries are separated. Refrigerate until syrupy. Spread over the cream cheese layer. Refrigerate at least 3 hours.

Yield: about 12 servings, depending on how big you cut them.

White Chocolate Tarts

1 can (14 oz) sweetened condensed milk
1 cup cold water
1 pkg. (3.4 oz) instant white chocolate pudding mix
2 cups whipped topping
2 pkgs (6 ct each) indiv. graham cracker tart shells

in mixing bowl combine milk, water
and pudding mix. Beat on low speed for 2 min. Cover and refrig. for 10 min. Fold in whipped topping, spoon about 1/2 cup into each tart shell. Refrig. unil serving.

Makes 12

Very Good. I liked these after they were refrig. overnight. The graham cracker shells were softer.

Ice Cream Sandwich Cake

This is the cake I've made my son the last 3 years and for dh, too. It came from Oct 2000 Quick Cooking Magazine.


22 ice cream sandwiches
1 carton (12 oz) frozen whipped topping, thawed
1 jar (11-3/4 oz) hot fudge ice cream topping
1 cup salted peanuts

Cut one ice cream sandwich in half. Place one whole and one half sandwich along a short side of an ungreased 13x9x2 inch pan. Arrange eight sandwiches in opposite direction in the pan. (I usually have to cut an extra one lengthwise to fill in gap next to side of pan) Spread with half of the whipped topping. Spoon fudge topping by teaspoonfuls onto whipped topping (warm it up a little in the microwave first to make it easier to do). Sprinkle with 1/2 cup peanuts. Repeat layers with remaining ice cream sandwiches, whipped topping and peanuts (pan will be FULL). Cover and freeze for up to 2 months. Remove from the freezer 20 minutes before serving. Cut into squares. Yield: 12-15 servings

Banana-rama-ding-dongs

Peel a banana and cut it in half. Insert a wooden stick or skewer into each cut end. Dip in your favorite flavored yogurt, and roll in granola, cereal, chopped nuts (or chocolate chips for kids). Lay on a waxed paper lined baking sheet, and freeze for 2 hours. To remove, gently peel off the paper. Wrap in sandwich-sized plastic bags or in foil. Freeze up to 1 month. Makes 2

Butterfinger Dessert

It's not on the recipe board. I've never posted any recipes there yet. Here's what you do:
Bake a chocolate cake and let it cool
Make up two small boxes of instant chocolate pudding
Cut your cake into cubes and layer half of it in the bottom of the pan.
Add half of the pudding.
On top of that, layer half a tub of cool whip.
Layer crushed butterfinger on top of the cool whip and then repeat the process from the beginning.

Banana Pudding

8 oz. cream cheese, softened
1 can condensed milk
1 large vanilla instant pudding
3 cups milk
12 oz. Cool Whip
6 bananas, sliced
1 box vanilla wafers

Mix softened cream cheese and condensed milk together. Add pudding and milk. Fold in Cool Whip. Layer 1/2 the wafers, 1/2 the bananas and 1/2 the pudding. Repeat, ending with a layer of pudding. (or your bananas will turn brown) Chill at least 4 hours before serving.

Hint: I make sure to mix the first three ingredients until it thickens up some because it makes it easier to assemble the pudding in a nice glass bowl. If you aren't trying to make it "pretty" for guest, then you can just skip this step.

I got this recipe out of our sunday school recipe book we made.

Amish Baked Apples

8 to 10 apples, cored, peeled and halved
3/4 c. white sugar
3/4 c. brown sugar
1/2 c. flour
1 tsp. cinnamon
2 tsp. butter, melted
1 c. water


Place apples in greased 13 x 9 dish. Mix remaining ingredients together in order given, in pan, simmer until thick. Pour syrup over apples and bake at 350 degrees for 35 to 40 munites until tender.

(the syrup ends up like a carmel sauce and my family loved this! I found it on the interent some time ago)

Strawberry Graham Dessert

You can use regular sugar and regular strawberry-flavored gelatin in this recipe. It's yummy either way.

1 cup graham cracker crumbs

2 tablespoons light margarine -- melted

3 ounces sugar-free strawberry-flavored gelatin

1 cup boiling water

2 cups fresh strawberries -- sliced

1 tablespoon lemon juice

4 ounces fat-free cream cheese

1/2 cup Splenda

1 teaspoon vanilla

2 cups Cool Whip Lite®

dash salt

fresh strawberries and mint

In a small bowl, combine graham crackers and butter; set aside 1 Tbsp. for topping. Press the remaining crumb mixture onto the bottom of a greased 8" square baking dish. Bake at 350º for 10 minutes. Cool on a wire rack.

In a bowl, dissolve jello in boiling water; stir in strawberries, 2/3 cups cold water and lemon juice. Refrigerate until partially set, about 1 to 1 1/2 hours. In a small mixing bowl, beat the cream cheese, Splenda, vanilla and salt until smooth. Fold in Cool Whip. Spread half of the cream mixture over the cooled crust. Cover and refrigerate remaining cream mixture. Pour jello mixture over filling; refrigerate until firm. Top with remaining cream mixture. Sprinkle with remaining crumbs. Refrigerate overnight.

Garnish with fresh strawberries and mint. Serves: 9

Grands!® Strawberry Shortcakes

Prep time: 30 minutes

BISCUITS:
1 (10.2-oz) can (5 biscuits) Pillsbury® Grands!® Refrigerated Buttermilk Biscuits (not the flaky style)

2 tablespoons margarine or butter, melted

1/4 cup sugar

STRAWBERRY MIXTURE:
1½ pints (3 cups) fresh strawberries, sliced

1/3 cup sugar

WHIPPED CREAM:*

1/2 cup whipping cream

2 tablespoons sugar

1/4 teaspoon vanilla, if desired

*or substitute one 8-ounce container of frozen whipped topping, thawed.

Heat oven to 375°F. Separate dough into 5 biscuits. Dip tops and sides of each biscuit in margarine; dip in 1/4 cup sugar. Place on ungreased cookie sheet. Bake at 375°F. for 13 to 17 minutes or until golden brown. Cool 5 minutes.

Meanwhile, in medium bowl, combine strawberries and 1/3 cup sugar; mix well. Set aside.

In a small bowl, beat whipping cream and 2 tablespoons sugar until soft peaks form. Beat in vanilla.

To serve, split biscuits; place on individual dessert plates. Top with whipped cream and strawberry mixture.

Fresh Strawberry Tarts

Prep Time: 45 minutes

CRUST:
1 Pillsbury® Refrigerated Pie Crust (from 15-oz. pkg), softened as directed on package

3/4 teaspoon sugar

FILLING:

2½ cups sliced strawberries

1/2 cup purchased strawberry glaze

6 tablespoons hot fudge ice cream topping, heated

1/3 cup frozen whipped topping, thawed

Heat oven to 450°F. Remove pie crust from puch. Unfold crust; press out fold lines. Sprinkle crust with sugar; press in lightly. Cut 6 rounds of crust with 4-inch round cookie cutter or trace 6 rounds with top of large plastic glass and cut out with a knife. (Piece scraps slightly for 6th round.)

Spray back of muffin pan with nonstick cooking spray. Fit rounds, sugard side up, alternately over backs of sprayed muffin cups. Pinch 5 equally spaced plats around sides of each cup. Prick each pastry generously with fork.

Bake at 450°F. for 5 to 7 minutes or until lightly browned. Cool 5 minutes. Carefully remove from muffin cups. Cool 30 minutes or until completely cooled.

Meanwhile, in large bowl, combine strawberries and glaze; stir gentlyto mix. Refrigerate 30 minutes or until thoroughly chilled.

Just before serving, spoon 1 tablespoon fudge topping into each shell. Spoon about 1/3 cup berry mixture into each shell. Top each with whipped topping. Serves 6.

Cobbler

I just use whatever fresh fruit is in season and of sale at the time. It's a true southern simple cobbler and they aren't really as sweet as some out there but it's a true cobbler and it's simple and my family loves it! We serve it warm w/ vanilla ice cream on top.

1/4 cup butter

1 1/4 cups all purpose flour

1 cup sugar

1 Tablespoon baking powder

1/4 teaspoon salt

1 cup milk

1/2 tsp. vanilla (a lot of times I use almond extract instead)

4 cups fresh fruit


Melt butter in 2 qt. square dish (not sure on dimensions, but it's the same as a brownie pan basically). (I put it in the oven while it is preheating and let the butter melt in there). Set aside to cool while you are doing the rest of the recipe. Stir together: flour, sugar, salt, baking powder. Mix in milk and vanilla. Pour batter over melted butter (I never let it completely cool first), do not stir...just pour over butter without stirring it together at all. Then spoon fruit over batter (including any juices) again, do not stir or mix at all. Bake 350 for 55 min.

Worms and Dirt (fun summer recipe for kids)

I'm doing this with my kids either today or tomorrow; it's yummy and fun for the kids.

8" clay flower pot (I could only find 10" so I'm going to just put some whole oreos on the bottom to raise the level some).

1/4 cup butter

1 cup powdered sugar

8 oz. cream cheese

Mix together and set aside the above 3 ingredients.

In a large bowl mix: 1 small pkg. instant chocolate pudding and 3 1/2 cups milk, add the cream cheese mixture and mix well, then fold in 12 oz. cool whip. Crush 25-30 oreo cookies. Cover hole in bottom of flower pot, alternate layers of cookie mixture and pudding mixture ending w/. crushed cookies. Cover w/ plastic wrap and refrigerate. (This recipe doesn't say to mix in the gummy worms but I got some to put in the middle for me my boys b/c I know they'd like it...other recipes I've seen use them.) (Also if you want to be really creative, I've seen people make them and put fake flowers in the top!).

BTW, you can also do a "sand in pail" version by using a pail and shovel (beach style) and using vanilla pudding and vanilla sandwhich cookies. we might do that one sometime too before summer is out.

Recipe from Better Homes & Gardens:

Fudge Brownies

1/2 c margarine or butter (I use butter.)
2 oz unsweetened chocolate
1 c sugar
2 eggs
1 tsp vanilla
3/4 c all-purpose flour
1/2 c chopped nuts (I omit these.)

In a medium saucepan, melt margarine and chocolate over low heat. Remove from heat. Stir in sugar, eggs, and vanilla. Beat lightly by hand just till combined. Stir in flour and 1/2 c nuts. Spread batter into a greased 8x8x2-inch baking pan. Bake in a 350° oven 30 minutes. Cool on a wire rack.

(Optional: Frost w/chocolate frosting and sprinkle with chopped nuts. I don't do either.)

Cut into bars. Makes 24.

This is the recipe I used that took first prize at our county fair this year.

Cream Cheese Chocolate Cupcakes

8 oz. cream cheese, softened
1/3 c sugar
1 egg
1/8 t salt
1 c choc. chips
1 c peanut butter chips

Cupcakes:
1-1/2 c flour
1 c sugar
1/4 c cocoa
1 t soda
1/2 t salt
1 c water
1/3 c oil
1 T white vinegar
1 t vanilla

Beat cream cheese 'til smooth. Add sugar, egg and salt. Mix well. Fold in chocolate and peanut butter chips. Set aside. Combine flour, sugar, cocoa, soda, and salt. Add wet ingred. and mix well. Fill muffin papers 1/2 full. Top each with 2 T of the cream cheese mixture. Bake at 350 for 25-30 minutes. These are absolutely delicious!

Triple Layer Brownies

1c. oats
1/2 c flour
1/2 c brown sugar
1/4 t. bkg. soda
1/4 t. salt
6 T. melted margarine

Middle layer:
3/4 c sugar
1/4 c melted margarine
1 oz. unsweetened chocolate, melted
1 egg
1/2 t vanilla
1/4 c milk
2/3 c flour
1/4 t salt
1/4 t bkg. powder
1/2 c pecans, chopped

Frosting:
1 oz. uns. chocolate
2 T marg.
1-1/2 c powdered sugar
1 t vanilla

Pat 1st layer in 11x7 greased pan. Bake at 350 for 5 minutes. Combine sugar, marg., and chocolate. Add eggs and vanilla. Mix well. Combine flour, bkg. powder, and salt. Add alternately w/milk. Stir in pecans. Pour over 1st layer and bake 25 minutes. Mix up frosting and frost brownies when they are cool.

Double Chocolate Trifle

1 pkg. brown mix, plus the ingredients to make the brownies
1-3/4 c. milk
2 pkgs. white chocolate instant pudding
2 c. cool whip
3 toffee bars, chopped

Prepare brownies according to pkg. directions. Cool completely. Mix pudding with milk. Fold in cool whip. Cut brownies into 1" cubes. Layer brownie cubes, 1/3 of the pudding, 1/3 of toffee bits, then repeat for 3 layers. Chill.

Mini Brownie Treats

1 pkg. brownie mix
48 striped chocolate kisses

Fix brownie mix. Fill paper-lined muffin tins 2/3 full. Bake 18-21 minutes at 350 degrees. Once done, immediately top each one with a chocolate kiss. Cool 10 minutes before removing from pan.

Lemon Bars

1 c. butter
1/2 c. sugar
2 c. flour
2 c. sugar
4 eggs
4 Tbsp. flour
4Tbsp. RealLemon Juice

Mix together butter, 1/2 cup sugar, and 2 cups of flour. Press into 10x15 inch jelly roll pan. Bake at 350 for 15 minutes or until light brown. Beat 2 cups sugar, eggs, 4 tablespoons flour, and lemon juice together and pour over baked crust; return to oven for 20 minutes. Cool and cover with powdered sugar; cut into bars. Keep in refrigerator.

Cream Puff-In-A-Pan

1 cup water
1/2 cup butter or margarine
1 cup all-purpose flour
4 eggs
8 ounces cream cheese, softened
2 (4.00 ounces) packages vanilla instant pudding mix
2 cups milk
12 ounces frozen whipped topping, thawed
1/4 cup chocolate syrup
grated chocolate (optional)



1. Preheat oven 350.
2. Bring water & butter to a boil in a 2 quart saucepan, stirring occasionally.
3. Stir in the flour.
4. Add the eggs 1 at a time,wisking well after each addition.
5. Spread the batter in a greased 10x15inch baking pan.
6. Bake for 25 min.
7. Cool in the pan on a wire rack.
8. Beat the cream cheese in a mixer bowl until smooth, scraping the bowl occasionally.
9. Add the pudding mix & milk.
10. Beat until blended.
11. Spread over the baked layer.
12. Top with the whipped topping.
13. Chill, cover in refrigerator.
14. Drizzle with the chocolate syrup.
15. Garnish with grated chocolate.

Caramel Apple Crisp

4 cups sliced tart apples (4 medium)
1/2 cup Caramel Sauce (recipe below)
2/3 to 3/4 cup packed brown sugar
1/2 cup all purpose flour
1/2 cup oats
1/3 cup margarine or butter, softened
3/4 teaspoon cinnamon
3/4 teaspoon nutmeg

Heat oven to 375°. Grease square pan, 8x8x2 inches. Arrange apples in pan. Stir in 1/2 cup caramel sauce until all apples are well-coated. Mix remaining ingredients. Sprinkle over apples. Bake about 30 minutes or until topping is golden brown and apples are tender. Excellent with vanilla ice cream or cool whip.

Caramel Sauce (easy!)

2 egg yolks, beaten
1/2 cup packed brown sugar
1/2 cup granulated sugar
1/4 cup margarine or butter
1/2 cup water
1 teaspoon vanilla

Heat all ingredients to boiling over medium heat, stirring occasionally. Boil and stir 1 minute. Serve warm or cold. Refrigerate any remaining sauce.

Hershey Torte

For the crust...

1 and 1/2 cups graham cracker crumbs
3 tablespoons sugar
1/3 cup butter melted

Preheat oven to 350. In a food processor chop graham crackers and add sugar...pulse to blend. Pour into pie plate and add melted butter. Mix in completely...then press with the back of a spoon to make an even crust all over the bottom of the pie plate. Bake in the oven 8-10 minutes or until slightly golden brown. Cool.

For the filling...

24 big sized marshmallows
1 giant size Hershey Bar: plain
2 tablespoons half & half

Melt all ingredients on low heat in a larger size sauce pan(this is to make room for the whipped cream later)stirring constantly. When completely combined turn off heat and set pan aside to cool.

1 cup heavy cream

Whip cream in a mixer until nice and fluffy(not too long or it will turn to butter) and fold into cooled chocolate mixture until combined. Pour on top of cooled graham cracker crust. Chill in the freezer for three hours. Serve with more whipped cream on the side.

Keep in the freezer!

I do this all of the time with cherries. I use 2 can of cherry pie filling on the bottom (occasionally I will add about a 1/2 tsp. of almond extract). Then pour the dry yellow cake mix over it and then the melted butter. PurposeDriven, I just melt a stick of butter and spoon over the top. I've tried doing pats on other things before and it burns in that spot. The way that I make this - it needs the soggyness of the butter added to the top, so I'd melt it if I were you. Sometimes I add more than a stick, but not much more. It won't cover the entire surface, but try to get it in each area as much as you can. I've done this with blueberry too but it is sweeter w/ the blueberries. I have a friend who did it with apples, I haven't tried that yet either. I'll have to try it with peaches. I really like to make blueberry and peach cobbler the real southern way though so it will be hard to break from those traditions I bet it is good w/ peaches though, I'll give it a try. Catherine

Eclair Cake

This ends up tasting just like a custard filled donut! This is too easy but tastes sooooo good:

1 box honey graham crackers
2 boxes French Vanilla instant pudding
4 cups milk
8 oz whipped topping, thawed

Cover the bottom of 9x13 pan with graham crackers. Mix pudding with milk. Add whipped topping to pudding and stir until well blended. Spread half of the pudding mixture over crackers. Place a layer of graham crackers over pudding. Spread the other half of the pudding over crackers. Place another layer of graham crackers over the pudding. Cover and chill at least one hour.

Fudge Frosting:
1/4 cup butter
1/4 cup cocoa
1/3 cup milk
bring ingredients to a boil.
Pour over 1 pound of powdered sugar and stir well.
Spread over cake while frosting is still warm.
This frosting is so yummy!

Keep refrigerated.

YUMMY Banana Pudding


1 box of vanilla wafers
1 large cool whip, thawed in fridge
2 small boxes of instant banana pudding mix (or vanilla)
4-5 large bananas (more if you want!)
8oz sour cream (yes, sour cream)
2 cups milk


Mix pudding with milk until it thickens. Add the 8oz of sour cream, mix. Add 2/3 container of the cool whip, mix.

Peel and slice the bananas.

In a large bowl layer the vanilla wafers, bananas, pudding mixture (usually twice). Top with remaining cool whip . I crumble some vanilla wafers on top for decoration. Chill for at least 2 hours before serving.

My family eats this stuff up. It is "richer" than "regular" banana pudding.

The link includes a spongecake crust recipe, but I don't use that. My dh didn't care for it, so I switched to a graham cracker crust instead. It's easier anyway.

Basic graham cracker crust
1½ c graham cracker crumbs
2 T sugar
6 T butter or margarine

Combine and press in the bottom of the springform pan. Bake 8-10 minutes.

Oatmeal Cake

1c oatmeal in 1/2c boiling water. Let stand in a bowl while you prepare rest of cake mix.

1/2c butter or marg.
1c brown sugar
1c white sugar
2 eggs
1 1/3c flour
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt


Cream butter with sugars, add eggs, then flour with cinnamon, soda and salt. Add to first mixture and blend well. Put in greased 9x12 pan and bake for 35min at 350

Icing:
1c brown sugar
1/2c coconut
1/2c butter
1/4 -1/2c milk
Let lightly boil on stove for about 5 min. Pour onto warm cake. Cool and serve.

Mixed Berry Frozen Cake

19oz tin of pie filling (any flavour)
Graham craker pie crust
4oz cream cheese
2c vanilla ice cream

Beat cream cheese until smooth. Beat in ice cream. Add 1/2 can of pie filling. Spoon mixture over crust. Top with remaining pie filling. Cover and Freeze.

Chocolate Raspberry Cheesecake

1 1/2 c. finely crushed graham crackers
1/4 c. powdered sugar
1/3 c. butter, melted
2 c. fresh or frozen loose-pack raspberries, thawed
1/2 t. granulated sugar
3 - 8 oz packages cream cheese, softened
1 14 oz. sweetened condensed milk
4 eggs
1 t. vanilla
1 c. semi-sweet chocolate pieces, (6 oz.) mleted

Crust: Combine crackers and powdered sugar; stir in melted butter. Press onto bottom and 2" up the sides of a 9" springform pan. In a bowl, stir together 1 c. of raspberries and sugar, set aside.

Filling: In large bowl beat cream cheese and condensed milk with electric mixer til combined. Add eggs and vanilla. Divide batter in half. Stir melted chocolate into 1/2 of batter. Pour chocolate batter into crust-lined pan. Stir raspberry/sugar mixter into remaining batter. Spoon over chocolate batter.

Place on a shallow baking pan. Bake at 350 for 50-60 minutes or till center appears nearly set when shaken. Cool in pan on a wire rack for 15 minutes. Loosen crust from sides of pan and cool 30 minutes. Remove sides of pan; cool cake completely. Cover; chill at least 4 hours. Serve with remaining raspberries. Makes 16 servings.

FANCY RICE KRISPIE TREATS

6 c. Rice Krispies
1 c. white syrup
1 c. white sugar
1 c. peanut butter
6 oz. chocolate chips
6 oz. butterscotch chips

Heat together and melt white syrup, white sugar and peanut butter. Add Rice Krispies and pat into pan. Melt chocolate and butterscotch chips together and frost treats.

Oh man is this good. Make sure you only make these when you HAVE to share them...They are EXTREMELY TOXIC TO A DIET.

Jo's Fruit Pizza
Butter one 15 1/2x10 1/2 x 1 inch cookie sheet.

Combine:

3/4 cup butter
1/2 cup powdered sugar
1 1/2 cups flour
Pat in pan Bake 350 degrees for 15 min. Cool

Beat together:

8 oz. cream cheese 1/4 cup sugar
1 T. milk
Spread over cooled crust. Refrigerate until firm 5-10 min.

Cook: Until thick and then cool,

1 cup fruit juice
2 T. corn starch
1/2 cup sugar
1 T. lemon juice
(I like to add a can of pineapple tidbits to my fruit pizza so I use the Drained pineapple juice with orange juice to make the cup of juice.)

Add: Sliced

Bannanas - 2
Strawberries fresh or thawed if frozen
Kiwis- 3
or any fruit you would like. Grapes and cherries are nice.
Add the fruits to the top of the chilled crust and cream cheese mixture ,spread the cooled , thickened, fruit juice mixture on top of all. Refrigerate until ready to serve.

This is yummy!! Enjoy!!

Super easy Cheesecake

2 pks philly cream cheese (room temp)
1/2 cup sugar
1/2 tsp vanilla
2 eggs


Mix all together with hand held mixer. Pour into graham cracker crust pie shells. Bake ay 350 for 40 minutes till center gets set. Cool 3 hrs or overnight in fridge.

Caramel Fudge Brownies

Need:
1 jar (12ounces) hot caramel ice cream topping
1 ¼ cups flour; divided
¼ tsp baking powder
Dash salt
4 squares (1 ounce each) unsweetened chocolate, coarsely chopped
¾ cup (1 ½ sticks) margarine or butter
2 cups sugar
3 eggs
2 tsp. Vanilla
¾ cup chocolate chips

Preheat oven to 350 degrees.
Lightly grease a 13 x 9 inch baking pan. Combine caramel and ¼ cup flour in a small bowl; set aside. Combine remaining 1 cup flour, baking powder and salt in a small bowl; mix well.

Place unsweetened chocolate and margarine in a bowl and microwave to melt. Stir until chocolate is completely melted. Stir sugar into melted chocolate with mixing spoon. Add eggs and vanilla; stir until well blended. Add flour mixture, stirring until well blended. Spread chocolate mixture into prepared pan.

Bake 25 minutes (may take longer). Immediately after removing brownies from oven, spread caramel mixture over top of brownies. Sprinkle top evenly with chocolate chips.

Reese’s Bits Blondies

Need:
2/3 cup butter or margarine; melted
1 cup packed light brown sugar
½ cup sugar
¾ cup Reese’s creamy or Reese’s crunchy peanut butter (I use great value)
2 eggs
1 tsp vanilla
1/3 cup milk
1 ¾ cup flour
1 tsp baking powder
1 cup Reese’s bits for baking

Preheat oven to 325 degrees. Grease 9 x 13 inch baking pan.

In a large bowl, beat butter, brown sugar, sugar and peanut butter until creamy. Add eggs and vanilla; beat well. Gradually beat in milk. Gradually beat in flour and baking powder, beating thoroughly. Stir in 1 cup baking bits. Spread batter into prepared pan.
Bake 40 45 minutes or until toothpick comes out clean.
You can also add a chocolate frosting and sprinkle some extra Reese’s bits on top of the frosting.

Chocolate Brownie Frosting:
¼ cup butter or margarine softened
¼ cup cocoa
1 Tb light corn syrup
2 Tb milk
1 tsp vanilla
1 ½ cups powdered sugar
In medium bowl, beat butter, cocoa, corn syrup, milk and vanilla. Gradually add powdered sugar, beating until spreading consistency.

This recipe was my dad's. Is it ever good!!!!!!!!!

Chocolate Peanut Butter Ice Cream

2 cans Eagle Brand milk
1 large box instant pudding (chocolate)
1 cup evaporated milk
1 cup crunchy peanut butter
1 ½ cup sugar

(I usually mix it all together first with a blender).

Add regular milk to the mark on freezer can. Add a little cold water to the ice-salt to start melting.

Homemade Chocolate Ice Cream (SUPER easy)

2 can of Eagle Brand milk
2 T of vanilla
Chocolate milk.

Put the Eagle Brand, vanilla in the ice cream freezer container, mix. Then add the chocolate milk to the fill line. Mix it up then freeze. YUM!!!

Turtle Tart

This is absolutely fabulous!

You will need

1 package of premade chocolate cookie dough (or the quick and easy kind out of the box)

1 can of chocolate frosting

1/2 cup of chopped pecans

1/2 cup of caramel topping (for ice cream)

1 bag of chocolate chips (semi sweet or milk depending on your taste)

Preheat oven to cookie instructions. Spread out cookie dough into a small tart pan totally covering the bottom of the pan. Bake cookie according to directions until done (but make sure it doesn't burn) When cookie is done let stand until cool. After cookie is cool spread the chocolate frosting covering the cookie bottom (probably won't use the whole can for this 1/2 maybe) drizzle caramel topping lightly over top of frosting, sprinkle chocolate chips and pecans on top. Place in a fridge until ready to serve.

This only took me 30 minutes including cooking and cooling time to make! Very quick to make for a picnic or function at a church or school.

DD3 and I made this for our today's Sunday dinner dessert. It is yummmmmmy!! I like this better than cheesecake swirl brownies because the cheesecake part stays on top. It's like two desserts rolled into one.

Black & White Cheesecake Brownies

1 (12 oz.) Nestle Toll House little bits semi-sweet chocolate, divided (2 c.)
1/2 c. sugar
1/4 c. butter, softened
2 eggs
1 tsp. vanilla
1/2 tsp. salt
2/3 c. all-purpose flour

BROWNIE BASE: Preheat oven to 350°. Melt over hot (not boiling) water, 1 1/4 cups Nestle Toll House little bits semi-sweet chocolate; stir until smooth. Set aside. In large bowl, combine sugar and butter; beat until creamy. Add eggs, vanilla extract and salt; mix well. Add melted morsels and flour; mix well. Spread into foil-lined 9-inch square baking pan. 1/2 c. sugar 2 tbsp. butter, softened 2 eggs 2 tbsp. milk 1 tbsp. all-purpose flour 1/2 tsp. almond extract 3/4 c. Nestle Toll House little bits semi-sweet chocolate, reserved from 12 oz. pkg.
CHEESECAKE TOPPING: In large bowl, combine cream cheese, sugar and butter; beat until creamy. Add eggs, milk, flour and almond extract; beat well. Stir in remaining 3/4 cup Nestle Toll House little bits semi-sweet chocolate. Pour over Brownie Base. Bake at 350 degrees for 40 to 45 minutes. Cool completely, cut into 2 1/4 inch squares. Makes: 16 (2 1/4 inch) brownies.

1 1/2 cups all-purpose flour
2 cups sugar
1 teaspoon salt
1 cup (2 sticks) butter, softened
4 eggs
2 teaspoons pure orange extract
1 teaspoon grated orange zest
Glaze:
1 cup confectioners' sugar
2 tablespoons orange juice
1 teaspoon grated orange zest


Preheat oven to 350 degrees F.
Grease a 13 by 9 by 2-inch pan and set aside. In a mixing bowl, stir together flour, sugar, and salt. Add butter, eggs, orange extract, and orange zest and beat with a handheld electric mixer until well blended. Pour batter into prepared pan and bake for 30 minutes, or until light golden brown and set. Remove from oven and pierce top of entire cake with a fork.

Glaze:
Combine all ingredients in a bowl, stirring until smooth. Pour glaze over cake. Cool cake and cut into squares.

Jeff's Famous Bread Pudding

5 cups bread cubes
½ cup brown sugar
¼ tsp salt
½ cup raisins (optional)
2 cups milk (2% or whole work best)
6 Tblsp butter
2 eggs, beaten
½ box instant vanilla pudding
cinnamon to taste (I use about 1 tsp)

Put bread 9x13 inch baking dish. Combine brown sugar, salt, raisins, pudding mix and cinnamon. Sprinkle dry ingredients over bread.

Microwave milk and butter till milk is warm and butter is melted. Stir in eggs. Pour over bread. Bake at 350º for 30-45 minutes, until knife inserted in center comes out clean. Allow to cool and set while making sauce.

Sauce:

6 oz evaporated milk
1¼ c sugar
1 stick butter

Melt butter. Add sugar and milk. Bring to a boil and boil, stirring constantly, for 2 minutes.

You can serve the pudding warm or at room temperature, but the sauce should be warm.

Apple Crisp


I got this recipe off of allrecipes and made it today and it was verrrry yummy. I normally make another one but I think I'll be making this one regularly too.

6 apples. peeled, cored, sliced
1 cup water
1 box white cake mix
1 cup packed brown sugar
1 tsp. cinnamon (I used slightly more, maybe 1 1/4tsp)
1 Stick Butter - melted
(I also used 1 tsp. vanilla extract)

Put apples on bottom of 13X9 inch dish. Add the cup of water over the apples. Mix together the dry cake mix, brown sugar and melted butter. It will be crumbly. (I put the vanilla in after this). Then put this mixture over the apples. Cook at 350 for 50-55 min.

We eat apple crisp and cobblers hot with vanilla ice cream on top so that's what we did with this one too.

You won't be disappointed!

Apple bars

1/2 c margarine
1 C sugar
1 Egg beaten
1/2 tsp baking soda
1/2 tsp cinnamon (I added more because I like it)
1 1/2 C flour
2 C raw apples (again I added more because I had lots. I used 1 big apples)

Cream together margarine and sugar. Add egg and dry ingredients then stir in apples. Put in 9x12 inch cake pan


Topping
1/2 C brown sugar
1/2 tsp cinnamon
1/2 c walnuts (which I didn't have so I didn't use)

Sprinkle topping over bars. Bake in 350 oen for 20-30 minutes. Cool.

Vanilla Ice Cream (Custard Based)

Custard made with egg yolk and cream is the traditional base for excellent wholesome ice cream. Below is the classic Vanilla Ice Cream from which we base our commercial recipe, but if you omit the vanilla, you can use the custard base with many different flavourings.

Makes approximately 3 pints

8 egg yolks
8 oz / 200g caster sugar
1 pint / 600 ml milk
1 pint / 600 ml double cream
4 teaspoons real vanilla essence (or to taste)


Pour the milk in a saucepan and slowly heat it to boiling point. In a bowl beat the egg yolks and sugar together and then still beating, pour over the milk. Return the mixture to the pan and stirring constantly, heat it until the mixture forms a film on the back of a wooden spoon. Do not let it boil or it will separate. Remove the pan from the heat, leave it until cold then stir in the cream and vanilla essence.

Pavlova

here is a recipe I got from a lady in New Zealand. It has never failed me.

Preheat oven to 450 F.

5 egg whites
1 1/2 cups sugar
1/2 tsp cream of tartar
pinch of salt
1 tsp vanilla

Beat egg whites and salt until frothy. Add cream of tartar and beat to a stiff foam. Add sugar 1 tsp at a time and beat until sugar is very stiff and sugar is dissolved. Fold in vanilla

Spread in a buttered 9x 13 pan
Put in the oven and turn the oven off. Leave it in there overnight

Hours before serving, spread with 1 pint cool whip and refrigerate for several hours. Top with fresh fruit-pineapple is my favorite and serve!

Chocolate Ganache

Make the ganache before making the cupcakes. While it cools, prepare and bake the cupcakes; when the cupcakes are cooled, the ganache will be ready to be whipped and used. If you prefer, you may opt not to whip the ganache. The frosting will be more dense and slightly smaller in amount. Bittersweet, milk, or white chocolate can be substituted for the semisweet chocolate. If you own two standing mixer bowls, use one instead of the medium bowl mentioned in step 1; the ganache can then be made, chilled, and whipped in the same bowl. The second mixer bowl will be needed to make the cupcakes. This recipe can be doubled.

Makes about 2 cups, enough for 12 cupcakes 1 cup heavy cream
8 ounces semisweet chocolate , chopped

A small flat spatula, sometimes called an icing spatula, is the best tool for spreading the chocolate ganache frosting.



1. Bring cream to boil in small saucepan or in microwave. Place chocolate in medium bowl and pour boiling cream over. Cover with foil and let stand 5 minutes. Whisk until smooth, then cover with plastic wrap and refrigerate until cool and slightly firm, 45 minutes to 1 hour.

2. Transfer cooled chocolate mixture to bowl of standing mixer fitted with whisk attachment; whip mixture at medium speed until fluffy and mousse-like and forms medium-stiff peaks, about 2 minutes.

Orange Dessert Ideas by MrsD

You could put orange chunks in a fluffy dessert. You know, those desserts made w/ whipped cream cheese or Cool Whip & gelatin. You could also use them in a fruit salad or alone w/ marshmellow dressing.

Marshmellow dressing: Whip together 8oz cream cheese, 1 small jar marshmellow cream & 1tsp of vanilla. Blend into fruit just b/4 serving. Or, refrigerate & use as a dip.

Fluffy dessert #1:

1 (3oz) box orange Jell-O
1 box vanilla instant pudding
1 box tapioca pudding
3C. cold milk
1 sm can mandarin oranges (substitute fresh oranges)
8oz. whipped topping


Cook Jell-O according to pkg directions. Add pudding mixes & milk; stir until thick. Add oranges. Fold in whipped topping. Refrigerate.

1pkg (6oz) orange gelatin
2C boiling water
6oz cream cheese, softened
14oz can sweetened condensed milk
8oz carton frozen whipped topping, thawed
(your oranges)

In a bowl, dissolve gelatin in water. In another bowl, beat cream cheese with an electric mixer until fluffy. Gradually blend in hot gelatin mixture, beating on low speed until smooth. Mix in condensed milk. Fold in whipped topping. Fold in your oranges. Transfer to serving dish & refrigerate a few hours til firm.

It's just like Mom used to make (except for the one time she forgot to put in sugar :giggle:).

3/4 cup sugar, divided
3 tbsp cornstarch
dash of salt
2 cups milk
4 eggs, separated
1 tbsp butter or margarine
1 tsp vanilla extract
40 to 45 vanilla wafers, divided
2-3 bananas sliced, divided

Preheat oven to 400°F. In medium saucepan combine 1/2 cup sugar, cornstarch and salt; gradually add milk. Cook over medium heat until mixture comes to a boil, stirring constantly. Continue to boil 1 minute, stirring constantly. Remove from heat.

Place egg yolks in medium bowl; gradully stir in half of milk mixture. Return mixture to saucepan. Cook over medium heat until mixture returns to a boil, stirring constantly. Continue to boil 1minute, stirring constantly. Remove from heat. Add butter and extract, mixing well.

In greased 1½-quart baking dish layer half of wafers, bananas and pudding. Repeat layers.

In medium bowl beat egg whites to soft peak. Gradually add remaining 1/4 cup sugar, beating until stiff. Spread over pudding. Bake 5 to 7 minutes or until golden brown. Garnish with wafers and banana slices, if desired. Serve warm or chilled.

Cream puffs are easy. I make the batter for the puffs... recipe like this one.

1/2 cup butter
1 cup water
1/4 teaspoon salt
1 cup all-purpose flour
4 eggs

Preheat oven to 450 degrees F (220 degrees C).
In a large pot, bring water and butter to a rolling boil. Stir in flour and salt until the mixture forms a ball. Transfer the dough to a large mixing bowl. Using a wooden spoon or stand mixer, beat in the eggs one at a time, mixing well after each. Drop by tablespoonfuls onto an ungreased baking sheet.
Bake 10 minutes
Turn oven down to 250.
Bake for 20 to 25 minutes in the oven, until golden brown. Centers should be dry.

Then I mix up some pudding (I use cook and serve, but have used instant) in either chocolate or vanilla and pipe it into the cool shells. Then I stick them in the freezer because I like them slightly frozen. I make mini ones so I can pop the whole thing in my mouth.

Pineapple Bars

Crust:
2 cups all purpose flour
2/3 cup of powdered sugar
1 cup margarine

Combine sugar and flour, cut in margarine until mixture is crumbly. Press on the bottom of a 9x13 pan. Bake for 15 min. at 350 degrees.

Filling:
1 can of crushed pineapple, drained
4 eggs
3/4 cup of brown sugar
1/3 cup of all purpose flour
2 cups of coarsely chopped nuts- slivered almonds or pecans

Combine pineapple, eggs, sugar and pineapple. Stir in nuts. Pour over partially baked crust. Bake in 350 oven for 30-35 min. Cool completely and cut into bars.

Reeses' Peanut Butter Brownie Bites
One package brownie mix, prepped according to package directions (short of baking)

Mini muffin tins

bag of Mini Reese's pb cups opened and foil and cup liner taken off

fill your muffin cups with raw brownie mix and bake 20 min until puffed and dry looking. At the end of the bake time, place one pb cup in the middle of each well inside the baked brownie. Let cool enough to eat. Enjoy!

Oh are you gunna love these!

I do this with peanut butter cookie dough. I dislike pb, but these, for some reason, I LOVE!

Default 10 minute Chocolate/Caramel "Turtles" that are Yummalicious!
EASY PRETZEL TURTLES

50 miniature salted pretzels (traditional shape)
50 milk-chocolate caramel center candies (Rolo candies work GREAT)
50 pecan halves

Preheat oven to 200 degrees. Spread pretzels on ungreased cookie sheet. Top each with one candy. Place cookie sheet in oven for 2 to 2 ½ minutes, or until candies have softened. Remove from oven and top (I smoosh them onto the Rolo) each slightly softened candy with a pecan half. Allow to set up in the refrigerator and then store in a tightly sealed container. Serve at room temperature and enjoy!!

16 oz. Cream cheese

Vanilla wafers
24 muffin tin liners
Pie Filling (cherry, blueberry)

Whip cream cheese, sugar, eggs, vanilla and lemon juice.
Fill muffin tins 2/3 full
Bake for 15 minutes @ 375.
Cool and then top with pie filling and chill.

Cinnamon Cream Cheese Squares

INGREDIENTS
2 tubes (8 ounces each) refrigerated crescent rolls

2 packages (8 ounces each) cream cheese, softened

1-1/2 cups sugar, divided

1 teaspoon vanilla extract

1/4 cup butter, melted

1 teaspoon ground cinnamon


DIRECTIONS
Unroll one tube of dough and place in a lightly greased 13-in. x 9-in. baking pan. Seal seams and perforations; set aside. In a large bowl, beat the cream cheese, 1 cup of sugar and vanilla until smooth. Spread over dough.
Unroll remaining tube of dough and place over cream cheese mixture, stretching to fit. Brush butter evenly over top; sprinkle with cinnamon and remaining sugar. Bake at 350° for 30 minutes or until golden brown. Cool; cut into squares. Yield: about 3 dozen.

1 box brownie mix
1/2 cup water
1 egg

Mix until smooth.

3 8 oz packages cream cheese, softened
1 cup sugar
3 eggs
1/2 teaspoon vanilla

Beat the cream cheese and other three ingredients until smooth.

1/4 chocolate chips

Grease a nine inch springform pan. Pour 1/3 of the brownie mixture in bottom of the pan. Pour all of the cream cheese mixture into the pan. Sprinkle with the chocolate chips. Spread the remainder of the brownie mixture over the top evenly.

Bake for 1 hour at 350 degrees. It is a good idea to set the springform pan on another pan lined with aluminum foil in case the brownie mixture oozes out of the cracks. I had this problem, so I had to clean things up and then try again with a pan underneath.
Cool completely in pan, then remove side of pan and wrap and refridgerate.

I made this up one day ~ my family loves it.

Pineapple Pudding

1 (16 oz.) container Sour Cream
1 can crushed pineapple
2 boxes (3.4 oz.) vanilla pudding
4 Tablespoons sugar
1 box Vanilla Wafers (I use reduced fat 'Nilla Wafer brand) (The reduced fat are crunchier so they stand up to being in the pudding better to me).

Mix everything but the vanilla wafers together in bowl. (Don't make the pudding according to the pkg. directions, just add mix it in dry with the other ingredients).

In a pretty glass bowl (so you can see the layers), layer the pudding mixture with the vanilla wafers. Let it chill for several hours.

I originally got this off of allrecipes.com. It can easily be cut in half, unless you are feeding a large crowd.

Cheese Fondue

2 cups milk
1 Tablespoon Worcestershire sauce
2 teaspoons ground, dry mustard
1 clove garlic, peeled and crushed
3 Tablespoons all-purpose flour
6 cups shredded cheddar cheese (although I like to use a mix of swiss and cheddar).

In medium saucepan over low heat, mix together milk, worcestershire sauce, dry mustard, garlic and flour. Heat until almost boiling. Gradually stir in cheese. Continue heating until all the cheese has melted. Keep warm in a fondue dish.

Orange Brownies

1 and 1/2 cups all-purpose flour
2 cups sugar
1 tsp. salt
2 sticks butter, softened
4 eggs
2 tsps. pure orange extract
1 tsp. grated orange zest

Frosting Ingredients

1 (8 oz.) pkg. cream cheese, softened
4 Tablsp. softened butter
16 oz. confectioners sugar
2 Tblsp. orange zest
2 Tblsp. orange juice
(I add a little bit of almond extract too, but that's not in the original recipe).

Frosting Directions:
Whip butter and cream cheese together w/ mixer. Gradually beat in confectioners sugar until combined and smooth. Beat in orange zest and juice.

Brownie directions:
Preheat oven to 350, grease 13X9X2" pan
Stir together flour, sugar and salt in a bowl. Add butter, eggs, orange extract and zest. Using electric mixer beat until well blended. Pour into prepared pan and bake for 30 min. or until light golden brown and set. Allow to cool and pierce entire pan w/ fork. Spread the orange cream cheese frosting over completely cooled brownies.

(I don't do the fork prick thing. I cool them and cut them into squares before icing, then I put them on a pretty dish and I drizzle the frosting all over them (hitting the dish with it some too b/c I think it's pretty that way), then I chill a little to let the frosting set up).

These are the healthiest chocolate chip cookies I have ever made -- and they are absolutely awesome -- no complaints from anyone! I use organic whole wheat flour that I get from our local Farmer's Market. I do't have the money or time to grind my own. Now, these make a HUGE batch of about 80 cookies -- so feel free to cut it in half or something. We don't because we are a pretty large family. One batch lasts us about a week.

Also, yes, there is 3 cups of brown sugar -- and they are quite sweet -- so you might be able to bring that down a bit.

Oatmeal Chocolate Chip Cookies

1.5 c butter, softened
4 eggs
3 c packed brown sugar
2 tsp vanilla
5 c rolled oats
3 c whole wheat flour
1/2 c all-purpose flour
4 tsp baking soda
2 tsp salt
1.5 c semisweet choc chips

Beat together the butter, eggs, brown sugar, and vanilla. Add oats, flours, baking soda, salt, and choc chips. Bake at 325 degrees for 10-12 minutes. (Yes, my Kitchen Aid overflows a bit when I make this! But, it mixes pretty well.)

Creamy Lemon Crumb Squares

Prep Time: 15 Minutes Cook Time: 25 Minutes
Difficulty: Easy
Servings: 12

Ingredients
1-⅓ cup All-purpose Flour
½ teaspoons Salt
1 teaspoon Baking Powder
1 stick (1/2 Cup) Butter, Slightly Softened
1 cup Brown Sugar (lightly Packed)
1 cup Oats
1 can (14 Ounce) Sweetened Condensed Milk
½ cups Lemon Juice
Zest Of 1 Lemon

Preparation Instructions

PREHEAT OVEN TO 350 DEGREES.
Mix butter and brown sugar until well combined.
Sift together flour, salt, and baking powder.
Add oats and flour to butter/sugar mixture and mix to combine.
Press half of crumb mixture into the bottom of an 8 x 11 inch pan.
Mix together condensed milk, lemon juice, and lemon zest. Spread onto the bottom layer of the crumb mixture. Top with the other half of the crumb mixture, but don’t press.
Bake for 20 to 25 minutes, or until golden brown.
Allow pan to sit on counter for 30 minutes after baking. Cut into squares and refrigerate for a couple of hours or until cool.
Serve cool.

Sopapilla Cheesecake Dessert

"Cream cheese, canned crescent rolls, cinnamon, and almonds create this delicious, Mexican-inspired dessert."
Ingredients:
3 (8 ounce) packages cream
cheese, softened
1 1/2 cups white sugar
1 1/2 teaspoons vanilla extract
2 (8 ounce) cans crescent roll
dough
1/2 cup melted butter
1/2 cup white sugar
1 teaspoon ground cinnamon
1/4 cup sliced almonds (I omitted the almonds)

Directions:
1. Preheat an oven to 350 degrees F (175 degrees C).
2. Beat the cream cheese with 1 1/2 cups of sugar, and the vanilla extract in a bowl until smooth. Unroll the cans of crescent roll dough, and use a rolling pin to shape the each piece into 9x13 inch rectangles. Press one piece into the bottom of a 9x13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough.
3. Drizzle the melted butter evenly over the top of the cheesecake. Stir the remaining 1/2 cup of sugar together with the cinnamon in a small bowl, and sprinkle over the cheesecake along with the almonds.
4. Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 45 minutes. Cool completely in the pan before cutting into 12 squares.

Cream Cheese Mints ~ by mom2riandkayl

8 oz package cream cheese
2 lbs powdered sugar
a little mint flavoring (oil, not extract - you usually have to get it at a hobby place or a pharmacy)

Mix well. (If you don't have a kitchen aid you have to finish by hand.)

You can either use molds (roll balls, dip in sugar, press in mold, pop out) or just roll them in balls then press them with a fork (like peanut butter cookies).

you'll need:
-1 box of basic fudge brownie mix
-3 eggs
-1/4 cup water
-1/2 cup canola oil
-3/4 cup mini marshmallows or 1/2 cup marshmallow creme
-1/2 cup creamy peanut butter
-1/2 cup chocolate chips or butterscotch chips or white chocolate chips
-(optional but if you add them you make it soo not my perfect brownie :giggle: ): 1/3 cup chopped walnuts

preheat oven to 350 degrees
spray 13x9 baking dish with spray oil

1. Mix brownie mix, eggs, water, oil together in a mixing bowl
2. Spread into 13x9x2 pan
3. Place marshmallows in mircowave for 30-45 seconds...or until pourable. Pour on top of brownie batter in pan.
4. Place creamy peanut butter in mircowave for 15-25 second or until pourable. Pour on top of brownie batter in pan.
5. use butter knife to swirl around PB and marshmallow into the mix.
6. sprinkle chocolate chips all over the brownie batter mixture.
7. Bake for 28-32 minutes or until toothpick comes out of center clean.
8. Cool then cut into squares. Store in airtight container.

For a fun option top with sprinkles or more chocolate chips or mini marshmallows as soon as the brownies are out of the oven and before it begins to cool.

Chocolate Buttermilk Cake

2 cups all-purpose flour
1 cup unsweetened cocoa
1 1/2 teaspoons baking soda
3/4 teaspoon salt
1 1/2 cups buttermilk
2 teaspoons vanilla extract
1 3/4 cups sugar
3/4 cup butter, softened (1 1/2 sticks)
3 large eggs

Preheat oven to 350.

Stir flour, cocoa, baking soda and salt in medium bowl with whisk.

In 2 cup liquid measuring cup, mix buttermilk and vanilla together. Set aside.

In large bowl, with mixer at low speed, beat sugar and butter until blended. Increase speed to high; beat until creamy, about 3 min. Reduce speed to low, add eggs, one at a time. Add flour mixture alternately with buttermilk mixture beginning and ending with flour mixture. Beat until blended.

Pour batter into prepared pans. Bake until toothpick inserted in center comes out clean - 30-35 min. Cool in pans on wire racks 10 min. Invert onto wire racks to cool completely. Frost.


I have doubled this and made it in a half-sheet pan and it does well in that too. I usually make a cream cheese frosting for it.

It's always moist and dense at the same time (like a bakery cake :) ) And the chocolate flavor really comes through well. :licklips:

Preheat oven to 300 degrees F (150 degrees C). Mix graham cracker crumbs, sugar, butter and cocoa. Press onto bottom and up the sides of a 9 inch springform pan. Set crust aside.
Beat cream cheese until smooth. Gradually add sweetened condensed milk; beat well. Add vanilla and eggs, and beat on medium speed until smooth. Toss 1/3 of the miniature chocolate chips with the 1 teaspoon flour to coat (this keeps them from sinking to the bottom of the cake). Mix into cheese mixture. Pour into prepared crust. Sprinkle top with remaining chocolate chips.
Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven (do not open oven door) and leave the cake in the oven to cool in the oven for another hour. Remove from oven and cool completely. Refrigerate before removing sides of pan. Keep cake refrigerated until time to serve.

"Heaven"

1 bag (11 oz) white chocolate wafers

1/2 cup Peanut butter

2 cups miniature marshmellows

4 cups rice krispies (although I have used cheerios in the past)



Melt the chocolate and peanut butter over low heat. Remove from heat and stir in mini marshmellows and cereal until coated. Spread into a greased 13 x 9 pan. Cool. Cut into squares and enjoy.
