I am so sick of eating the same thing over and over. Or someone always complaining about what we are eating.
I want to come up with some non-traditional options especially for breakfast and lunch.
Here is what I have so far, please add yours.
trail mix (home made) kids love it I always forget to make it
mini pizzas
waffle/apple sandwich (cooked waffles, pb and apples slices)
celery w/pb another that I forget my kids like
granola cookies

wraps!!! you can do anything with wraps
I get these wraps called flat-outs
some things I have done:
-mayo, lunch meat, bacon, cheese (you can add tomato, lettuce, sprouts, etc)
-lettuce, shredded cooked chicken (leftovers), gouda or haravati cheese, sliced almonds, vinaigrette dressing
-leftover coleslaw, sliced or shredd BBQ pork, mozzarella cheese.
basically I use whatever leftover meat I have in the fridge, add some green stuff, cheese, and usually sliced almonds or crushed tortilla chips, and something wet like mayo, BBQ sauce, salad dressings, etc
other ideas:
-bacon quesadillas...bacon and cheese with diced up bell peppers
-mini quiches
-mini pigs in a blanket using little smokies and crescent rolls (pillsbury's website has recipe/cooking time)
-potstickers or egg rolls with fried rice
-bagel pizzas! top a whole wheat or plain bagel sliced in half with your pizza toppings and bake for 5 minutes or so at 350.
-taco salad
-nacho salad (fritios topped with ground beef, shredded cheese, sour cream, salsa or diced tomatoes, optional black olives)
no ideas for breakfast just different variations on pancakes...banana, blueberry, chocolate chip, etc.

Frittatas are easy and make a wonderful, nutritious breakfast.
Choose a large, round pan that is oven-safe. Saute ANYTHING you'd like to have in your frittata. Here are some examples:
Finely chopped onion and a couple of shredded potatoes
Chopped, fresh spinach and sliced portabella mushrooms
Chopped tomatoes and green peppers
ANY combination of the above, or anything else your family likes
Be sure to use REAL BUTTER when you saute.
Next, crack 8 eggs into a bowl and whisk them until they're light yellow. Pour the eggs over the sauted veggies.
Place the whole pan into a preheated, 400 degree oven. Bake for 15 minutes. Top with your favorite sliced or shredded cheese (sharp cheddar or aged Swiss are delicious), and return to oven just until cheese melts, a couple of minutes more. Serve immediately with some fresh fruit on the side.
Makes 8 servings. (You cut it into wedges like a pie.)
MMMMMM!!! My family loves when I make fritattas for breakfast.

I like to do chicken salad. I have two chickens in the crockpot now, and then I will pull it all off the bone and chop it up to freeze and use it for chicken salad, chicken fajitas, chicken alfredo, and chicken and rice casserole.
My chicken salad...I don't measure, just mix until it tastes good:
chopped chicken
grapes
nuts (usually pecans)
celery
mayo
little bit of mustard
little bit of pickle relish
you can also add apples.
Great summertime lunch to me! serve on crackers or bread or plain

Hi,
Doing something different is always the trick
My Kids love sushi, piklets, corn chips with cream cheese and sweet chilli sauce, mini dim sims, popcorn and nuts.

Can you explain what a piklet and mini dim sims are, please? :) I don't think we have those in the states or maybe we do, and I don't know it. :lol:

Hi,
Well a piklet is like a mini pancake. It has flour, egg, sugar and milk. You make them bite size and put jam, cream, honey whatever you like on them. Mini dim sim are chinese, they have meat and cabbage and flavourings and are wrapped in wonton wrappers. You steam them and dip them in soy sauce. They are really Yum.:wink:
