Does anyone do once a month cooking or freezer cooking and care to share any good freezable recipes?? I am wanting to try this..

I have a cook book, but then it looked too complicated. I did start something new this summer. I make a meal and freeze the leftovers in individual containers. So, if I make Mac and Cheese, only 2 people in my family eat it. I put the leftovers in individual containers and then on nights when we can't eat together (happens all the time in our house), we can each go to the freezer and choose a meal when we can eat. I am freezing a lot of vegetarian meals this summer (from Moosewood Cookbook). I will also freeze some meatloaf. I made a lot of marinated flank steak for company one night and froze it individually. Discovered that Pasta Putanesca freezes well. I also enjoy freezing soups and have about 5 recipes that I use. Given how busy my family is, this system is working well for us. I am at the point where I am only going to have to make 1-2 meals/week to keep my stock up.

I do freezer cooking. I basically take my meat, place it in a ziploc freezer bag, add some seasonings and a wet item. my recipes all involve my Homemade Gourmet seasonings, but some you can adapt with basic seasonings
Here's one recipe that can be done without my seasonings easily:
Italian Sausage and Peppers: 6-8 italian sausages, can of diced tomatoes, chopped basil, minced garlic, bag of frozen bell peppers w/ onions. Add all to the freezer bag. dethaw and bake covered at 350 for 50-60 minutes or slow cooked on low for 4-6 hours. (I use Garlic Basil Seasoning)
I also pre cook al my ground beef once I buy it from the store, I season it all with taco seasoning and it goes into the freezer in 2 cups amounts to use for tacos, casseroles, etc.

you can cook chicken in the crockpot, pull it off the bone, chop, and freeze to use in casseroles, fajitas, salads, etc
I like to freeze spaghetti casserole, sloppy joes, tacos, chicken tetrazzini, creamy chicken mushroom, taco soup, chili
I read the 30 day gourmet freezer manual (something like that) that I borrowed from the library, and you can sign on line to print shopping lists and worksheets that make it easy to plan. I haven't done it in a few months, but I really loved doing it!
